Need some easy dinner ideas that don’t require a lot of time or equipment? Take a look at this post’s round up of some dinner for some inspo. While you’re at it, the new recipe for today is a broccoli, beet and bean rice bowl. Full of healthy carbs and fiber, this bowl will stick with you! Making it vegan, or dairy free is as simple as leaving off the cheese.

These recipe round up posts are not exclusive to those in college, but merely are selective for those recipes that can be used with little to no equipment as can be found in your typical dorm room! Now a quick tip for creating recipes in your recipes to make them easier and require less equipment. Simply, let others do the baking/cooking etc for you! Have leftover rice from your chinese take out? Use it for a grain bowl! Or, if you have takeaway options at your college, pick up ingredients that can be used in other recipes. Good ideas are veggies (either raw or cooked), grains and sources of protein. I more often than not repurpose leftovers for additional recipes. Take for example the breakfast I made today. I went out a couple days ago and got a baked sweet potato as one of my sides. I ended up taking it home and repurpossed it into a fudgy sweet potato chocolate protein baked oatmeal! (So good..BTW). You can do the same for chicken, steak, veggies, etc.

Anyway, enough of my tangent (but seriously I love using my leftovers to make other meals and I think you should hop on that train if you haven’t already to simplify your life and make your meals come together that much quicker.)

The first recipe I would like to share with you is contributed by Family Food on the Table. This BBQ Chicken Quinoa Salad Bowl can be made even quicker with the use of a microwave and pre-cooked chicken! (Pre-made quinoa is also helpful, but not required to make this in a dorm room environment).

Say you picked up one of those pre-made rotissarie chickens at the store and now you have more chicken to use!? Try out this 5 ingredient sweet potato, bean, chicken and bulgur bowl. (Feel free to swap out the bulgur with another grain to make it more microwave friendly if needed!)

Dinner salads more your style? Make sure yours have enough “umph” to get you through the rest of your night. A good tip? Especially if you have a meal plan is to get your basics from the salad bar and then spruce it up with what you like!

First up is this Southwestern Chopped Salad from Family Food on the Table.

This Low Carb, High protein Hamburger Salad with all the Fixings is one of my FAVORITE salads to make. Easy too, especially if you have a salad bar and grill. Get your salad base (of course add whatever you’d like) add your favorite hamburger toppings and more if desired (think tomatoes, +/- a tiny bit of cheese, maybe some onions etc) then go get a hamburger patty from the grill and also some pickles. Cut that up and toss into your salad with the pickles, add some mustard and mix and viola! You have a hamburger salad. Lower in carbs without the bun and much more satisfying with all the volume from your salad and veggies! Major win. I know mustard isn’t typical salad dressing, but it really makes the salad taste like a traditional hamburger with it!

Loving the Tex-mex idea from the first recipe, but not wanting meat? Try a similar one with this Tex Mex Black Bean Wedge Salad from Alison’s Allspice.

If you have a slow cooker and want an easy “set it and forget it” it type of recipe that can serve as a great meal prep then try out this clean, vegan and gluten free Lentil, Bean and Collard Greens Stew. Only 5 ingredients are needed and if you don’t have collard greens, feel free to sub other greens in like kale, or spinach, for example.

Dorm Room Edition Dinner Round Up with Broccoli, Beet & Bean Rice Bowl [Clean, Vegan, GF]

Ingredients

  • 1/4 cup brown rice (or at least 1/2 cup cooked)
  • 3 T black beans canned/cooked
  • 1/2 beet canned/cooked
  • 1/3 cup broccoli or more
  • 1 T pesto
  • 1/4 t minced garlic
  • 3 quartered artichoke hearts

Optional

  • 1 T mozzarella cheese shredded

Instructions

  1. If you don't have brown rice pre-made either use a microwavable rice package (or cook to package instructions). If you are doing it with a bowl, feel free to add in your broccoli while cooking if you are starting with it raw.

  2. If you already have all of these ingredients pre-cooked. Dice you beet, place all ingredients (except cheese if using) and mix 

  3. Sprinkle the top with cheese (if using) and place your bowl in the microwave for about a minute or so until it is heated through

  4. Feel free to give it another stir! Eat and enjoy. (Or place the top on it to take with you!)

Recipe Notes

This recipe is great to use as a meal prep recipe and make in individual pyrex containers.

It's even easier to make if you have all the ingredients coming from a jar or a can. 

Feel free to omit ingredients you don't like, or have and feel free to add others as you see fit!
