Low carb, high protein hamburger salad with all the fixings

Had a weekend full of BBQ’s, but still have leftover hamburgers, or looking forward to making some today? Rather than making another hamburger on a bun try out this low carb, high protein hamburger salad alternative! It packs a lot more fiber, and gives you a lot more to eat than a regular hamburger would. It is fresh and crisp, and perfect to customize based on your taste preferences. Now that grilling season is upon us, this would work well for any leftovers you have, or you could make them specifically for this recipe! Works well if the burger is hot, or even if it has cooled off.

Happy Memorial Day! I hope you were all able to enjoy this long holiday weekend (for most of you at least I hope). I hope it’s been filled with remembrance of why we celebrate Memorial Day, great weather, and BBQ’s! I on the other hand had/have to live out this holiday weekend vicariously through all of you. Therefore, I would love to hear how you spent your weekend and what plans you have for today!

Why does this have to be so you might ask? Well here are the terrible facts:

  1. You may have guessed this one but, of course, I’m working.
  2. I’ve worked all weekend actually.
  3. To make matters worse, I’ve been working a string of nights this weekend.
  4. I was incredibly nauseous and spent most of it attempting not to throw up since I think that’s the WORST. Alas, as hard as I tried I still threw up multiple times, and still had to work. (TMI? Sorry :/)
  5. I immediately switch back to days tomorrow.
  6. I’m working 12 straight days in a row. Today is Day 8. (However, I’ve done worse stints of long strings of working)
  7. As this post posts, I will be enjoying my Monday off too, oh wait, nevermind I will still be working when this posts. GAH! Although, I suppose I’m somewhat used to it by now? (Aka accepted some dismal facts).
  8. Fact is, I’ve worked EVERY holiday during the past year while I’ve been an intern except New Year’s, and Easter. (Fingers crossed this gets better as I continue with my training.)

Some times, this is how I feel when I’m exasperated and listening to others complain. I can’t say I’ve ever voiced this out loud, because hey everyone is allowed to vent:

In fact, I noticed that there was red on my shoe. I immediately guessed it was blood, because there’s a high probability of that. Upon further inspection, and logical deduction, I decided it was much too bright to be blood since it was dry and settled on jello. (I had made red jello earlier). You know things are bad when red=blood is your first assumption.

Things are also bad when you again made the mistake of trying to open your apartment door by pointing your car key at it and hitting the unlock button. Yeah, that happened again. Remember the first time? Lol. This time, though, it was to the outside of my complex and there is a code you have to key in. I just up and laughed at myself, again going, “OMG, I really just did that”, and “Yup, I’m tired”.

Anywho, it seems like this weekend has really been wonderful for everyone else. The weather was finally hot and the sun was shining. (Hello…summer? Which seems to have followed winter…?) I hope you had an awesome time of it and also have some hamburger leftovers, because seriously this is hands down my favorite salad to make. You can use any ingredients you have on hand, and make it how you like to make a hamburger. The key ingredients though, at least in my mind, are the hamburger (obviously), pickles, tomatoes and mustard. It may seem weird, but I highly encourage their use. I’ve also added cucumbers, broccoli and shredded carrots because I had them. Feel free to add whatever else you’d like.

Ingredients
Servings: salad
Instructions
  1. Dice and slice any ingredients that you want and mix them in a bowl. Top with mustard, shake so all is covered and enjoy!
Recipe Notes
  1. The amounts can be varied as with any salad. Feel free to use as little, or as much as you want.
  2. If you don't eat meat and want to substitute it for another type of burger, feel free to do so just make sure your salad has some fat on it so you absorb the nutrients.

  1. This is a fun and healthy way to eat a hamburger! YUM! Sorry you had to work over the entire weekend. We drove (from Boston) down to a family wedding in the Baltimore area this weekend. So much fun reconnecting with family we haven’t seen in forever. I could have done without the long drive but all in all a great holiday weekend.

    1. Yeah I love it so much, it might just be my preferred way to eat them now. It was…an interesting weekend I suppose for me, especially working nights. There weren’t nearly as many intoxications as I expected, but unfortunately I had to deal with a ton of assault victims. Terrible. I remember reading about your trip! If I remember correctly, I’m so glad you had all those snacks prepared. Traffic sucks but I’m glad you got to reconnect with family. Such a plus. I’m glad you had a great holiday weekend and I appreciate you sharing your travels with me!
