This month’s recipe redux post is all about that soup. Time for soup!!! Well, according to this month’s theme for the redux post. Although, the weather currently is also calling out for some warm meals.

Souper Soups on the Move 

Let’s take a new look into the soup bowl. Soup is comfort food, but it’s going lots of new places from prep in the Instant Pot to lunchboxes where it’s served up in an individual thermos. Show us your healthy recipes for switching up soup.

Personally, I am not much of a soup person. I’m a dense-is-better sort of person, so I’ll go for a thick stew over a thin soup anytime. I’ll round up a few of my other recipes for soups and stews through the post in case you are interested in other ideas! I do not have an instant pot (although I would LOVE to have one). They sound amazing and a great time saver. I like that you seem to be able to saute and do other “cooking” features rather than just heat and cook through as a slow cooker does.

Don’t get me wrong, I LOVE my slow cooker. Mainly, because it is a set and forget cooking tool, but there is some planning involved. You can’t start a slow cooker at 5 pm and hope it’s going to be ready for dinner. An instant pot, on the other hand CAN do that for you!

I know about the original Instant Pot that people have and rave about. My limiting factor right now in getting one is 2-fold. 1. Price. 2. I’ll be moving YET again in less than a year so I’m trying at this point to limit any purchases and try to use whatever I have in the apartment or on hand. On the prior point, has any one had great experience with an off brand Instant Pot that you can tell me about?

My roommate told me recently that apparently there is this new appliance out (? Ninja?) that is both an instant pot and an air fryer? Sounds pretty neat. I’ll have to research it. Has anyone else heard of it? Thoughts?

Anywho, based on the prompt, I always make my soup/stew and then parcel it out into single serving containers and then pop them in the freezer once they are cooled. This is meal prepping at it’s simplest. I make anywhere from 4-8 servings and have plenty of lunches, or in-a-pinch dinners when I need them. (As you can see in some of my other recipe photos, they are already in their single serving container. So, go ahead and try any of the many recipes in this post and in the recipe link and stay warm!

Cran-Pecan Turkey Bulgur Stew [Clean]

Prep Time 15 minutes
Cook Time 45 minutes
Total Time 1 hour
Servings 4 bowls

Ingredients

  • 1 cup bulgur
  • 1/3 cup whole cranberry more if desired
  • 1-2 cup turkey
  • 1/4 cup pecans
  • 1 T cinnamon
  • few dashes nutmeg
  • 2 cups water/liquid of choice

Instructions

  1. Place the bulgur, spices and liquid in a pot and bring to a boil. Then, simmer for about 20 minutes until most of the liquid is gone and the bulgur is almost ready. 

  2. While the first part is simmering, pull apart your turkey into smaller chunks if needed and crush your pecans just slightly.

  3. When your 20 minutes are up, stir in the rest of your ingredients except for the pecans. 

  4. Cook for about 10 minutes or so (until the liquid is gone). Fluff and then stir in the pecans. Feel free to add more cinnamon if desired.

  5. Serve and enjoy, or separate into individual portions to save for another meal.

  1. I’ve never made anything with bulgur in it but this is a great use for leftover turkey! :D!!

    I feel ya on purchases when you’re about to move–that’s what stops me half the time, haha.An instant pot/air fryer sounds amazing! I haven’t heard of it but will definitely have to look into that…
