I finally made it to Mexico! I’ve had about 4-5 trips planned to Mexico that have been thwarted for one reason, or another over the past several years. I thought that perhaps I wasn’t supposed to go and thought that maybe I would get their one day. However, my co-resident was planning a destination wedding in Playa Del Carmen and wanted me to go. So, with a slight hesitation I scheduled my flight, hotel etc and crossed my fingers that all would go well without a hiccup. Needless to say I got there and back in 1 piece and had a great time!

So, this post covers a couple firsts for me. First time to Mexico and first time for an Indian Wedding. It was the most beautiful wedding I have ever been for and am thankful I was able to join on my friend’s special days. (Not a typo..Indian weddings apparently take many days and is quite an ordeal!)

I ended up staying at an all-inclusive close by (Panama Jack’s All-Inclusive resort in Playa Del Carmen) and thought that was a wonderful choice. I had a great time there and am glad I made the decision to not stay at the wedding hotel.

The first event was a morning event called the Haldi Ceremony. This is where the bride and groom are separated and guests place turmeric paste on them and bless them. Then, we are given a token of thanks and a blessing. It was a neat Ceremony followed by lunch by the ocean.

There was a break during the Haldi Ceremony while the bride to be changed into a different outfit. During this break, the women were given Henna. This was awesome aside from the fact that I needed to then keep my hand flat and straight for the next hour, or so to help the dye set. Let’s just say I had to get creative when having to go to the bathroom and eat lunch with this stuff on my hand. Not going to lie, when I got back to my hotel, I ended up scraping it off so that I could get outside and enjoy the sunshine before that evening’s party.

I don’t have many pictures of the Sangeet ceremony from that night, but it was very fun. There was a lot of dancing and entertainment. However, I will share a story about the way over. We were all dressed up and heading over to the other hotel for the party when I found myself being pulled into  a prehistoric photoshoot? Very random. I have no idea why it happened, or where those pictures are, but it was a bit crazy haha.

The wedding itself happened in the morning. I dressed in a Sari for the first time (given to me by the bride to be) and got quite a few comments haha. One person told me I looked “exotic”. Likely, it was because I was a Caucasian female in Indian clothing haha. Oh well, lol. The groom came in on the white horse above and we all walked around dancing and celebrating in front of the hotel. It reminded me a bit of a New Orlean’s Second Line, except we walked in a circle and it was pre-wedding. Then, we went into the wedding.

The wedding itself took FOREVER. 3 hours. It was nuts. Who knew there were all these steps to go through to get to the end of an Indian wedding. It was certainly interesting to witness, and I’m glad they gave me a snack in the middle of it, haha. However, I can’t even believe how beautiful everything was. Indian wear is so sparkly and the bride’s outfits were just stunning. She was a stunning bride and pulled off a stunning wedding. I am just amazed and trying to give mad props wherever possible. I’m hoping that you can tell by some of these pictures I’m showing.

After the wedding, there was another lunch. Then, that night we were transported to X’Caret Park. I think this park would be awesome to check out during the day sometime. It was huge (definitely not fun to walk in heels), but the wedding reception was held in a cave. Very cool. There was a cocktail hour prior to the reception with drinks, a mariachi band and appetizers. Then, once the bride and groom got their, there were these “native” men who walked around blowing conches and signalling for us to follow. We went down to the reception via this stoned circular downspiral lit by tiki torches. We all lined up side by side on the path down and lit sparklers. This lit the way for the bride and groom and was really neat. I’m thankful no botdy lit on fire with so many sparks and so much material.

Then, we finally made it into the reception area, which as you can see was amazing and decorated beautifully. There was a couch for the bride and groom and the rest of the night was more or less a typical wedding reception with dinner, dancing, speeches and the likes.

We had to leave super early the next morning, so we unfortunately missed the send out brunch, but man it was a very extensive and tiring wedding. I couldn’t believe how tired I was after it was all done, I can’t even imagine how tired the bride was. I am glad they spent a few more days to recover afterwards. I could say more, but this post would be way too long if so. Overall, it was a great experience and I’d be happy to give more details if you want. Flourless Sweet Potato Protein Muffins [Clean, Vegan, GF]...And A Dash of Cinnamon

Flourless Sweet Potato Protein Muffins [Clean, Vegan, GF]

Cook Time 15 minutes
Total Time 25 minutes
Servings 6 muffins

Ingredients

  • 2/3 cup old fashioned oatmeal
  • 1 t baking powder
  • 1 scoop vanilla protein powder
  • 1 small sweet potato
  • `~6 T water/liquid of choice

Instructions

  1. If you don't already have a cooked sweet potato on hand, cook your sweet potato using your preferred method 

  2. Preheat your oven to 350 degrees and grease 6 muffins tins (or more if you are doubling/tripling etc the recipe)

  3. Place all ingredients (cooked sweet potato) into your food processor and blend until smooth. You may need to add a bit more water (this will depend on how absorbent your protein powder is).

  4. Spoon out into your greased muffin tins

  5. Cook for about 15 minutes or until a toothpick comes out clean

  6. Let cool on a cooling rack. Store in an airtight container in the fridge.

Recipe Notes

This recipe is easy multiplied if you would like to make more than 6 muffins. These muffins store and travel well and are quick to make.

The quickest way for me to cook my sweet potato is by stabbing it all over with a fork (skin on) and then cooking in the microwave for 5 minutes. Be careful though when peeling as it will likely be VERY HOT directly out of the microwave.
