Flourless Sweet Potato Protein Muffins [Clean, Vegan, GF]

Ingredients

  • 2/3 cup old fashioned oatmeal
  • 1 t baking powder
  • 1 scoop vanilla protein powder
  • 1 small sweet potato
  • `~6 T water/liquid of choice

Instructions

  1. If you don't already have a cooked sweet potato on hand, cook your sweet potato using your preferred method 

  2. Preheat your oven to 350 degrees and grease 6 muffins tins (or more if you are doubling/tripling etc the recipe)

  3. Place all ingredients (cooked sweet potato) into your food processor and blend until smooth. You may need to add a bit more water (this will depend on how absorbent your protein powder is).

  4. Spoon out into your greased muffin tins

  5. Cook for about 15 minutes or until a toothpick comes out clean

  6. Let cool on a cooling rack. Store in an airtight container in the fridge.

Recipe Notes

This recipe is easy multiplied if you would like to make more than 6 muffins. These muffins store and travel well and are quick to make.

The quickest way for me to cook my sweet potato is by stabbing it all over with a fork (skin on) and then cooking in the microwave for 5 minutes. Be careful though when peeling as it will likely be VERY HOT directly out of the microwave.
