Stovetop:
1. Dice eggplant and onion
2. Grease pan and add the eggplant, onion and slaw mixture
3. Use either oil or water to cook mixture until onions are translucent and slaw mixture is soft (about 3-5 minutes). Continue to stir
4. Once cooked, add black beans, tomato sauce and spices. Stir to combine.
5. Add to bowl and top with cheese (leave off if vegan)
6. Eat and enjoy!
Microwave:
This can also be done in the microwave in a pinch.
1. Dice eggplant and onion as above
2. Add these and the slaw mixture to a microwave safe bowl and add a few table spoons of water.
3. Microwave for 3-5 minutes or until soft. Drain extra water
4. Mix in tomato sauce, black beans and spices.
5. Microwave for another minute. Top with cheese (omit if vegan)
