If you are tired of corned beef and cabbage, why not try out this super simple clean, vegan (with option) and gluten free meal! It takes just a matter of minutes to make and is full of fiber to keep you full.

Sooooo, who wants to talk about the Coronavirus? Insane isn’t it? I am just waiting to see how it unfolds. Obviously, you guys know (if you’ve been reading me) that I am in the healthcare field. I am getting bombarded by emails and warnings and all sorts of things from every angle for the past several weeks all regarding this virus. I even had 3 patients had to cancel their appointments with me last week because their city was under quarantine. Yup, did you know cities here apparently in the US are being quarantined? Crazy. Anywho, here are some thoughts and hopefully some laughs to get you through these trying times.

There are no reported cases, or PUIs (persons under investigation) in my specific town, but everyone is on high alert. Important things to remember are primarily to not panic! Also, more importantly be curteous to others if you are sick. This has actually been a huge pet peeve of mine for many years now. How is it that people think it is ok to have the flu, or be coughing and super sick and go out and do things/go to the doctors etc? and worst, not wear a mask?

I’m honestly hoping through this pandemic people continue to realize and practice good hand hygiene, to stay away from others when you are sick, and wear a mask to PROTECT OTHERS when you go out and are sick. That would be a major benefit I think of all of this madness. A hopeful silver lining.

However, to watch what is happening in the world today is just insane. Things are shutting down left and right. It makes you wonder if the entire world is going to go on hold for a few weeks/month(s)? to help stop the spread. That would be really insane. I’ve been actively following the spread of the virus for both personal and professional reasons.

Personally, I was supposed to be taking my big birthday trip in a couple of weeks. I was really anticipating it and super excited. However, it became apparently that it was unlikely I would get through it without being quarantineed myself and since I have patients to care for, I couldn’t take that risk. I was supposed to head to Toronto to visit my friend there for the tail end of my trip since he had gotten me tickets for Hamilton as a birthday present. However, that too has now been cancelled. That’s twice now my wishes to see Hamilton have been thwarted!! So, my trip to Toronto has also now been cancelled.

Professionally, there are a lot more ramifications. Places don’t have testing kits. Hospitals down have enough of the appropriate types of masks and gowns. A company who makes surgical sterile packs had a contaminant issue a few months ago and now some hospitals may need to cancel all elective surgeries and may not have enough stuff to do emergent surgeries. Hospitals are contemplating cancelling clinics, etc. This may be a necessary means, but the ramifications could be enormous. Who knows. All we can do is wait and see what happens, I suppose.

As all of this is unfolding, just remember to try and look for information on reliable sources such as the CDC website and WHO website. Many of the medical groups also have up to date information.

Finally, I don’t know about where you are, but toliet paper has sold out everywhere here, and I know it’s happened in other places, too. My friend in PA sent me a video where the Sam’s club there had ZERO meat, and no milk products. Interesting, I thought. In times like these when who knows what could happen I would think it would be more prudent to stock up on non-perishable food items rather than the perishable ones. But, alas, that’s just what I think. Bottom line, stay safe! Stay away from others if you think you might be contaminated/are feeling sick. As always, hand hygiene is supreme! (As silly as it sounds, because everyone should know this, but remember to cover your cough!)

Veggie Black Bean Slaw Bowl [Clean, Vegan, GF]

Keyword 10 ingredients or less, blackbeans, coleslaw, eggplant, onion
Prep Time 2 minutes
Cook Time 10 minutes
Servings 1 bowl

Ingredients

  • 1/3+ cup eggplant diced
  • 1/2+ cup slaw mix
  • ~2 T onion diced
  • 1/2 cup black beans drained
  • 1/4 cup tomato sauce
  • few dashes paprika
  • few dashes turmeric
  • few dashes curry powder
  • mozzarella cheese** shredded, optional

Instructions

  1. Stovetop:

    1. Dice eggplant and onion

    2. Grease pan and add the eggplant, onion and slaw mixture

    3. Use either oil or water to cook mixture until onions are translucent and slaw mixture is soft (about 3-5 minutes). Continue to stir

    4. Once cooked, add black beans, tomato sauce and spices. Stir to combine.

    5. Add to bowl and top with cheese (leave off if vegan)

    6. Eat and enjoy!

  2. Microwave:

    This can also be done in the microwave in a pinch.

    1. Dice eggplant and onion as above

    2. Add these and the slaw mixture to a microwave safe bowl and add a few table spoons of water.

    3. Microwave for 3-5 minutes or until soft. Drain extra water

    4. Mix in tomato sauce, black beans and spices.

    5. Microwave for another minute. Top with cheese (omit if vegan)
