If you have been reading my blog for awhile now you know I love volume. Therefore, you probably won’t be surprised when I tell you that sandwiches aren’t really my thing. Do I eat them? Yes. Often? No. When I do eat them, I try to make them last as long as possible. I’m a strange eater to watch I’m sure. First, the crusts come off and I eat them. Then I’ll eat one of pieces of bread. Then, maybe I’ll eat it like a normal sandwich (at least what is left of it). Ha! Otherwise you take a few bites per half and you’re done! No bueno. How is that supposed to be satisfying? Convenient, for sure, but not satisfying. I have made a few sandwich-like meals on the blog here. I end up eating them the same way. I pick them apart to make them last longer. So, what do I like to do when I’m at home but want something like a sandwich? You’ve probably already guessed by the title of the post, but make it into a salad!! You know one of my favorite salads (which I posted a while ago here) is a hamburger salad. SOOO much volume and you get to eat a delicious hamburger for so much longer. Plus, if you’re trying to lower your carbs it is even better since you get rid of the bun.

Same thing goes for tacos! My second favorite salad, up to this point, has been a taco salad. Everything in a taco…on a bed of lettuce… means that much more of that delicious taco taste! Salsa makes a fabulous dressing in case you didn’t already know that :).

Recently, I’ve added an additional favorite salad. One that I’ve been eating almost every day now for the past several weeks. I just love it and can’t wait to share it with you. It evolved over time mainly due to my forever search for more volume and more efficiency. What started as an attempt to make avocado toast easier to cut and more voluminous turned into this AMAZING salad. As you can guess, it’s going to be based off the good old BLT sandwich. Although, honestly, I never ate just plain BLTs. I was always a BLTE, or BLTAE sort of person. (Not sure if those are actual recognized acronyms, but the e is for egg and the a is for avocado. Technically, I often swap out the bacon for ham because I like ham better. Don’t hate me haha.)

Anyway, once I decided to try and make it into a salad, man there was no going back. Typically I’m a scrambled egg all the way sort of person, but these eggs are best done over easy. Piercing the eggs with your fork to let it run out over your broken up bread is where it’s at. Yum. The hot sauce is bomb, too. I put hot sauce on most things, though.

I urge you to try out the sandwich into a salad method when you are trying to figure out ways to eat more without adding many more calories, but be more satisfied, while also increasing your fiber, veggie and micronutrients at the same time. Major win. Enjoy! Let me know what you think if you try it out. I urge you to add the avocado as it’s a great source of healthy fats and really shines in this salad. Leave out the meat if you want too.

How To Make Your Sandwich More Satisfying & A BLT Salad Recipe (Clean, LC)

Easy recipe hack to make any sandwich more satisfying! Clean and Low carb options!

Cook Time 5 minutes
Servings 1 salad

Ingredients

  • few handfuls lettuce/spinach of choice washed, cut
  • 1 tomato diced
  • 1-2 eggs
  • 1/2 avocado
  • 1-2 pieces bacon* cooked to your liking
  • 1 piece bread of choice
  • hot sauce optional

Instructions

  1. Wash, dry and cut your lettuce/spinach of choice. Place in your salad bowl.

  2. If you haven't already done so cook your bacon using your preferred method (microwave, broiler or stove top)

  3. While this is cooking, dice your tomato and your avocado and place on top of lettuce

  4. Once your bacon (or meat of choice) is done cooking, break apart and add to salad

  5. Toast your bread of choice (use a bread that works with your diet. Low carb/keto/clean etc)

  6. Once done, break apart and add to salad

  7. Make your your pan is hot and greased and crack your eggs into your pan. Leave for about a minute and then flip. Cook just until the white is cooked and move eggs to your salad. (~30 seconds on second side)

  8. Top with hot sauce. (I recommend stabbing your eggs to let the yolk run over the bread). Eat and enjoy!

Recipe Notes

This salad is easy to customize!

It works well with bacon, ham and even without either!

It is easy to make for a crowd, as well. 

As for eggs, I usually top it with two. 

It can work with any type of bread that can be toasted. Use something that works with your diet whether that be clean, low carb, keto, gluten free!
