Chicken Tomato Black Bean Pasta [Clean, GF, Low Carb]

Start the new year with a new food! Using alternative pastas such as this black bean pasta is a great way to up your fiber and protein and change up your traditional noodles. For those of you who need to lower your carbs, this is a great recipe to try to get your pasta fix, without the carb load.

New Year, New Ingredient:

Introduce us a ‘new’ (or new-to-you) ingredient you’ve discovered recently and show us how you’re using it in a healthy new recipe.

There are plenty of new foods to choose from. I tend to try out new foods as long as they are on the more “reasonable cost” side, especially if it is a clean food. I know that there are plenty of ingredients that I probably use ALL the time that you guys may have never seen before aside from in my posts (looking at you may psyllium husk powder, maca powder or nutritional yeast? If you haven’t I highly recommend each of those. I LOVE them and use them all the time.)

New foods can be awesome to try!

I am also one of those people that seem to get on a new food “bandwagon” pretty late. I will be honest and admit that I still have never had an acai bowl and only had my first poke bowl a couple of months ago. Shocking…I know haha.

Anyway, this post I challenge you to try an alternative pasta. Think black bean (obviously), chickpea or other veggie pastas. They are a great source of protein and fiber often and have a better nutrititional profile that your typical white pasta. I highly encourage you to try it out!

Great source of fiber and protein!

This is the pasta that I am going to introduce to you today. It has a killer nutrition profile. High in protein and fiber and low in carbs. So this is a great alternative for diabetics when looking for a pasta fix. You can use it in a wide variety of recipes including the one I am sharing today.

This recipe I am sharing is SUPER quick. Especially if you already have chicken prepared, or leftover from another meal! Man how I love to repurpose leftovers and this is a great recipe to do it with. I made this for, ahem, one, but it’s easy to multiple to get more servings! Enjoy your new year and your new foods! Chicken Tomato Black Bean Pasta [CLEAN, GF, LOW CARB]

Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes
Servings 1 bowl

Ingredients

  • 1 chicken breast
  • 1 oz black bean pasta
  • 1 can no-salt-added diced tomatoes drained
  • 1/2 cup saurkraut optional
  • 1 clove garlic minced
  • 1/4 cup no- salt-added tomato sauce or pasta sauce of choice
  • few dashes oregano
  • few dashes basil

Instructions

  1. If you don’t have chicken breast already made, cook using your preferred method. I recommend grilling with italian seasoning. See notes for alternatives

  2. As your chicken is cooking, cook the pasta according to the directions on the bag

  3. Once your pasta is cooked, drain and place back into the pot.

  4. Mix in your drained tomatoes, tomato sauce, garlic, saurkraut, oregano and basil. Mix.

  5. Once your chicken is done cooking, or with your leftover chicken, dice and mix in with the above ingredients.

  6. Serve once all ingredients are mixed and heated through. Save any leftovers in an airtight container in the fridge.

Recipe Notes

I seasoned my chicken with italian seasoning (can use oregano and basil) and then cooked on my George Foreman until done.

Alternatively, you can use:

  1. Any leftover chicken you have already made, or from another meal
  2. A microwave
  3. Bake
  4. Stovetop
  5. An actual grill

If you are vegan, feel free to either omit the chicken, or swap in a vegan option!

  1. I love the alternative pastas! Their flavor and texture is great but the one drawback I’ve found is that they seem to fall apart more easily, and don’t make for great leftovers. The tomato and black bean pasta combo looks like it was delicious!

  2. Yay for black bean spaghetti! I’ve only tried it once so far, but I love that it’s high in fiber/protein! :] I need to get more! (Love that this takes so little time to make too! :D!)
