Preheat your oven to 350 degrees and grease an 8x8 dish
Crack your eggs into a bowl and whip
Add in the salsa and chopped vegetables of choice ( *I used broccoli, cauliflower, snap peas, zucchini and summer squash) and mix into the egg mixture
Pour out into the greased dish and place into the oven for 30-35 minutes or until solid
When done, take out and slice into 4 pieces and serve.
If you are using this as a main meal then double/triple etc the recipe until you can feed as many people as you have. If this is just for you, slice into 2 pieces and eat one now, save the other half for later.
Feel free to use whatever vegetables you prefer
Other side dishes can accompany the frittata, as well, if desired!
