Chocolate PB Protein Brownie Bars [LC, Clean, Vegan, GF]

Ingredients

  • 1/2 cup peanut flour
  • 1 scoop chocolate protein powder
  • 1/4 cup cocoa powder
  • 1 t baking powder
  • 1 t vanilla extract
  • few dashes cinnamon
  • liquid of choice

Instructions

  1. Preheat your oven to 350 degrees and line an 8x8 dish with parchment paper

  2. Mix your peanut flour, protein powder, cocoa powder, baking powder, vanilla extract and cinnamon in a bowl. 

  3. Slowly add your liquid of choice until a sticky batter forms

  4. Pour out onto the parchment paper and use your spatula to help form and pat down the batter.

  5. Place into the oven for 15-20 minutes or until a toothpick comes out clean

  6. Let cool for a few minutes, then slice into either bars or squares in the size that you prefer. 

  7. Feel free to cool on a cooling rack. Place in an air-tight container once fully cooled.

Recipe Notes

If making this for a large crowd and prefer a 9x13, triple the recipe. 

I used water as my liquid of choice, I don't give exact measurements because it depends on the absorbency of your powders. You will likely need around 1/2 cup liquid.

Cut into bars for the bar form, cut into squares if you prefer the more traditional brownie shape.

Store extras in an airtight container once cooled.
