Garden Veggie Frittata [Clean, LC, GF]

Ingredients

  • 4 eggs
  • 1/4 cup salsa
  • at least 1 cup Veggies of choice* chopped

Instructions

  1. Preheat your oven to 350 degrees and grease an 8x8 dish

  2. Crack your eggs into a bowl and whip

  3. Add in the salsa and chopped vegetables of choice ( *I used broccoli, cauliflower, snap peas, zucchini and summer squash) and mix into the egg mixture

  4. Pour out into the greased dish and place into the oven for 30-35 minutes or until solid

  5. When done, take out and slice into 4 pieces and serve.

Recipe Notes

If you are using this as a main meal then double/triple etc the recipe until you can feed as many people as you have. If this is just for you, slice into 2 pieces and eat one now, save the other half for later.

Feel free to use whatever vegetables you prefer

Other side dishes can accompany the frittata, as well, if desired!
