Roasted Red Pepper Deviled Eggs [Clean, GF, Low Carb, Vegetarian]

Ingredients

  • eggs (hard boiled)
  • Roasted Red Pepper Sabra Hummus (1 container/dozen)
  • paprika (optional)

Instructions

  1. Hard boil your eggs if you don't already have some on hand

  2. Once cooled, crack and peel the shell off of however many eggs you would like to make

  3. Slice the peeled eggs and place the yolks in a bowl, the whites on a plate

  4. Add a ratio of 2-3 tablespoons of hummus per egg into the bowl with the yolks and mix together

  5. Spoon the mixture back into the whites, sprinkle with paprika if desired and eat!

Recipe Notes

-The more hummus you use the creamier it gets. There are approximately 20 tablespoons of hummus in each container. If you are making a full dozen then you will need a full container of hummus

-If you have no intention of serving these to guests, then make it easy on yourself and just smother the hummus on the eggs and eat! (This is how I eat my hard boiled eggs because hummus is the new salt ;) )
