Matcha and Green Apple Protein Waffle [Vegan, Clean, GF]

Ingredients

  • 1/3 cup old fashioned oatmeal ground into flour
  • 1/2-1 scoop vanilla protein powder
  • 1 scoop matcha green tea powder
  • few dashes cinnamon
  • 1/8 t ground cloves
  • 1/8 t nutmeg
  • 1/4 t baking powder
  • 1/2 T ground flax seed
  • 1/2 Green Apple
  • few T liquid of choice

Instructions

  1. Grease your waffle iron and pre-heat it

  2. Meanwhile, grind your oatmeal and flax seeds (if whole) and add them to a bowl

  3. Add the rest of your dry ingredients (protein powder, matcha, cinnamon, cloves, nutmeg and baking powder) to the bowl and mix.

  4. Dice your apple and mix it in with the dry ingredients

  5. Add your liquid tablespoon by tablespoon until all the ingredients are wet and mixed 

  6. Scoop out your batter onto the waffle iron and cook

  7. Carefully place on a plate, and top with pure maple syrup if desired!

Recipe Notes

  1. I use a coffee grinder to grind both my oats and flax seed
  2. This will make more than 1 waffle if using a smaller waffle iron
  3. The recipe is easily multiplied to make more than 1 waffle if desired
  4.  The edges of the waffle will not be super smooth because of all the apples. This is OK!
  5. You don't have to use a Granny Smith Apple. You can use whatever variety you have on hand.
  6. The amount of liquid you use will depend on how absorbent your protein powder is. Therefore, I always recommend adding just a little bit at at time and mixing and looking at the consistency before adding more liquid. I just use water.
