Preheat your oven to 350 degrees and grease 6 muffins tins
Grind your oatmeal into a flour and add it into a bowl
Mix your shredded coconut, vanilla protein powder, cinnamon,and baking powder with the oatmeal
Add your liquid of choice until your batter thins. You want it to be formed enough to be stable on your spoon or spatula when transferring to the muffin tins, but thin enough not to be able to form it with your fingers if you were to touch the batter.
Once fully mixed, place the batter into your greased muffin tins. Top with extra coconut and bake for about 20 minutes, or until your toothpick comes out clean.
Once finished cooking, remove from the oven and let cool for a couple minutes before transferring to a cooling rack.
Eat and enjoy! Store any leftovers in the fridge in an airtight container
