Toasted Coconut, Sweet Potato and Walnut Chocolate Protein Baked Oatmeal [Clean,Vegan, Gluten-Free]

Ingredients

  • 1/3 cup old fashioned oatmeal
  • 1/2 scoop chocolate protein powder
  • 1/2 sweet potato
  • 5 walnuts (crushed)
  • ~1/2 T unsweetened shredded coconut
  • few dashes cinnamon
  • 1/2 T psyllium husk powder
  • 1/4 t nutmeg
  • water/liquid of choice

Instructions

  1. If you don't have a cooked sweet potato, I prefer to pre-cook mine in the microwave. Take a fork and stab the potato multiple times in all areas. Place it in the microwave and cook for 2-5 minutes until soft. Let the potato cool for a minute before peeling and dicing

  2. Meanwhile, while your sweet potato is cooking (if you need to soften it). Preheat your oven to 350 degrees and grease an oven safe bowl

  3. In a bowl, mix together the oatmeal, protein powder, walnuts, cinnamon, nutmeg and psyllium husk powder

  4. Fold in the diced sweet potato

  5. Add water, or liquid of choice until you get a thick, but pourable batter

  6. Pour the batter into the pre-greased bowl and top with coconut

  7. Bake for ~20-25 minutes or until cooked through

  8. Eat and enjoy!

Recipe Notes

  1. The amount of liquid you use will depend on how absorbent your protein powder is and how much psyllium husk powder you use (or don't use). 
  2. I like to place the coconut on top because then it gets toasted, feel free to mix it in if you prefer.
