If you don't have a cooked sweet potato, I prefer to pre-cook mine in the microwave. Take a fork and stab the potato multiple times in all areas. Place it in the microwave and cook for 2-5 minutes until soft. Let the potato cool for a minute before peeling and dicing
Meanwhile, while your sweet potato is cooking (if you need to soften it). Preheat your oven to 350 degrees and grease an oven safe bowl
In a bowl, mix together the oatmeal, protein powder, walnuts, cinnamon, nutmeg and psyllium husk powder.
Fold in the diced sweet potato
Add water, or liquid of choice until you get a thick, but pourable batter
Pour the batter into the pre-greased bowl and top with coconut
Bake for ~20-25 minutes or until cooked through
Eat and enjoy!
