Strawberry Pumpkin Baked Protein Oatmeal [Clean, Vegan, Gluten Free]

Ingredients

  • 1/3 cup old fashioned oatmeal
  • 1/4 cup pure pumpkin puree
  • 1/2 scoop vanilla protein powder
  • 2 dashes pumpkin pie spice
  • 1/2 T psyllium +/-
  • several strawberries
  • water/liquid of choice

Instructions

  1. Preheat your oven to 350 degrees and grease an oven safe bowl

  2. Combine your oatmeal, pumpkin, protein powder, pumpkin pie spice and psyllium in a bowl. Add your liquid of choice while stirring until you have a thick, but pourable batter

  3. Let it sit while you slice up your strawberries. Mix some of the strawberries in with the batter. 

  4. Pour the batter into the greased bowl and feel free to top with additional strawberries

  5. Bake for 25 minutes or until cooked through

  6. Eat and enjoy! Or feel free to let it cool off and eat it cold after it has been in the fridge for a while it will become even more dense if you let it cool off)

Recipe Notes

  1. The amount of liquid you add will depend on how much psyllium husk powder you use and how absorbent your protein powder is.
