Grease and preheat your pan or skillet
Mix oatmeal, pumpkin, protein powder, almond butter, cinnamon and baking powder in a mixing bowl
Slowly add water or liquid of choice until batter consistency forms
Add a spoonful of batter to the pan until it bubbles. Then flip and cook until done
Eat and enjoy with some maple syrup if desired once all the batter is cooked through!
If vegan and gluten free make sure to choose oatmeal and protein powder that works with your diet.
The amount of pancakes made depends on how big your pancakes are. I like silver dollar size as it allows me to eat more pancakes!
This recipe is easily multplied to make enough for more than one person!
