Easy, healthy protein cookie recipe
Preheat your oven to 350° and line a cookie sheet with parchment paper
Add your vanilla protein powder, cinnamon, psyllium husk powder, coconut flour, baking soda and salt to a bowl and mix.
Then, add your cashew butter and slowly add your water or liquid of choice until a slightly thicker than pancake batter forms (you want it stay formed when you place on a cookie sheet)
Use a spoon to spoon out your cookies onto your lined cookie sheet and bake for about 5 minutes.
Let cool for a couple minutes before carefully removing the cookies from the parchment paper
Eat and enjoy! (cool leftover cookies completely before transferring to an airtight container for storage)

The amount of liquid needed will depend on if you use psyllium and the type of protein powder you are using, so just add slowly and keep mixing until you get to the right consistency.
The number of cookies you make will depend on the size you make them. I got 14 slightly larger than silver dollar size cookies
The nutrition facts will depend on your ingredients. For mine, each cookie comes out to about 28 calories.
