Flourless Fudgy Apricot Protein Muffins [Clean, Vegan, Glutenfree]

Ingredients

  • 1 cup old fashioned oats ground to flour
  • 1 scoop chocolate protein powder
  • 1 T psyllium husk powder
  • 1 t baking powder
  • 1 T cocoa powder
  • few dashes cinnamon
  • 2 T apricot preserves *sugarfree
  • water/liquid of choice

Instructions

  1. Preheat the oven to 350 degrees

  2. Grease a muffin tin

  3. Mix the oatmeal flour, chocolate protein powder, cocoa powder, cinnamon, psyllium husk in a bowl.

  4. Mix in the apricot preserves

  5. Slowly add your liquid of choice (I just used water) until a batter forms

  6. Spread out the batter into 8 muffins tins

  7. Bake for 15 minutes or until a toothpick comes out clean

  8. Eat and enjoy. Keep leftover muffins in an airtight container.
