Red Velvet Baked Protein Oatmeal for 2 [Clean, Vegan, GF]

Ingredients

  • 3/4 cup old fashioned oats (or more if desired)
  • 1 scoope protein powder (vanilla or chocolate)
  • 2-3 T cocoa powder (less if using chocolate protein)
  • few dashes cinnamon
  • 1/2 cup mashed beets
  • liquid of choice
  • dark chocolate chips for topping

Instructions

  1. Preheat your oven to 350 degrees and grease your oven-safe bowls

  2. Mix all the dry ingredients together in a bowl

  3. Follow by the wet ingredients (add liquid until you get a pancake batter consistency)

  4. Divide batter into the 2 oven safe greased dishes. Top with chocolate pieces and bake for approximately 25 minutes or until done.

  5. Make sure it is cool enough to eat! Enjoy!

Recipe Notes

Feel free to use psyllium husk powder  (I would have done so if I had it available). Just remember it soaks up a lot of liquid (as does the protein powder) so you may need more than expected. 

-This recipe is very lenient. Feel free to add more oatmeal if desired and any other ingredients

-If the batter becomes too thin, never fear. It will only take longer to cook. Alternatively, you could add more oatmeal to thicken it.
