Pumpkin Cranberry & Chocolate Chip Protein Pancakes [Clean, GF, Vegan]

Ingredients

  • 1/3 cup old fashioned oats ground into flour
  • 1/2 t baking powder
  • 2 T peanut flour
  • several dashes pumpkin spice
  • 1/4-1/3 cup pure pumpkin puree
  • 1/2 T (more or less) chocolate chips
  • 2 T (more or less) dried cranberries or handful of fresh/frozen
  • water/liquid of choice

Instructions

  1. Grind your oatmeal into a flour

  2. Add the oat flour, baking powder, pumpkin spice, peanut flour into a bowl and mix

  3. Add your pure pumpkin puree and slowly add your liquid of choice while stirring until a pancake batter consistency forms (see above for an example)

  4. You can fold in your mix-ins at this time if you want, or you can add the cranberries and chocolate chips to the pancakes while they are cooking

  5. Grease a large pan and heat it. Wait to place your pancake batter on it until it sizzles when you drop some water on it.

  6. Once your pan is hot enough, drop spoonfuls of batter until there is no more space on the pan (top with a few mix-ins now if doing it at this time)


  7. Wait for the bubbles to form before flipping your pancakes

  8. Repeat until all your batter has been pancaked!

  9. Eat and enjoy. Feel free to top with pure maple syrup or whatever you fancy!
