Berry Pecan Protein Oatmeal Bake [Clean, Vegan, Glutenfree]

Ingredients

  • 1 cup old fashioned oats
  • 1 scoop vanilla protein powder
  • 1 T cinnamon
  • 1 t nutmeg
  • 1 t cloves
  • 1 T psyllium husk powder
  • 1 handful pecans
  • 1 cup berries
  • water/liquid of choice

Instructions

  1. Preheat your oven to 350 degrees and grease an 8x8 baking dish

  2. Combine your oats, protein powder, cinnamon, nutmeg, cloves, psyllium husk powder in a bowl and mix

  3. You have the option of mixing in your pecans whole, or slightly crushing them before adding them to the mix

  4. Slowly add your liquid of choice and continue to mix until you get a slightly thicker than pancake batter consistency.*

  5. Fold in your berries of choice and then transfer mixture to your baking dish

  6. Bake for approximately 20-25 minutes or until a toothpick comes out clean

  7. Let cool for a few minutes before cutting into either squares, or bars. 

  8. Eat and enjoy! Save leftovers in an airtight container in the fridge or freezer

Recipe Notes

The amount of liquid you will use will depend on how absorbent your protein powder is and how much psyllium husk powder you use. 

If you add too much liquid you will just have to bake it for a bit longer, or add in more psyllium husk powder, oats and or protein powder
