Flourless Chocolate Turmeric Pistachio Protein Cookies [Clean,Vegan, GF]

Ingredients

  • 1 oz Wonderful Pistachios crushed
  • 1/3 cup old-fashioned oatmeal ground
  • 1 scoop chocolate protein powder
  • 1/2 t baking powder
  • 1/2-1 T cocoa powder
  • few dashes cinnamon
  • few dashes turmeric
  • few T water/liquid of choice

Instructions

  1. Preheat your oven to 350 degrees and grease a cookie sheet

  2. If you have shell-on pistachios, remove the shell and gently crush each half. If they are pre-shelled, then crush them.


  3. Take your oatmeal and grind it into a flour. Add it to a bowl

  4. Add your chocolate protein powder, cocoa powder, baking powder, cinnamon, turmeric and approximately 2/3rds of the pistachios to the bowl and mix.

  5. Slowly add your water or liquid of choice until a thick batter develops.

  6. Scoop out the batter onto your cookie sheet until you have used all of the batter. 

  7. Use the rest of the pistachios as toppings for the cookies.

  8. Bake for approximately 7 minutes, or until cooked through. 

  9. Remove from the oven and cool on a wire rack. Eat and enjoy! Store any left overs in an airtight container.

Recipe Notes

-I just broke the pistachios with my fingers. Alternatively you could gently pulse in a food processor or even leave them in halves if desired.

-The amount of liquid you add will depend on the absorbency of your protein powder. Add tablespoon by tablespoon until you get your desired consistency.

-This recipe is easily manipulated to make more cookies as desired.
