Preheat your oven to 425 Degrees
Clean and slice your carrots into strips*
Spread them out on a cookie sheet
Optionally spray them with an olive oil cooking spray
Take a basting brush and baste the carrots with maple syrup
Sprinkle the cinnamon and nutmeg over top
Roast for about 15-20 minutes, making sure to turn every 5 or so minutes until done.
This recipe is easily adaptable to however many you want to make. The raw picture shows 4 carrots for a measure (It's just me!) Think around 2 carrots per person.
Please be very careful when cutting up your carrots.
The thinner you make your carrots, the quicker they will cook. So keep a close eye on them.
