Preheat your oven to 350 degrees and line a muffin tin with paper liners
Mix your peanut flour, coconut flour, cornmeal, baking powder, cinnamon and nutmeg in a bowl
Add your pumpkin and then slowly add water (or your liquid of choice) until a batter forms
Scoop out into the muffin tins and bake for ~25 minutes or until clean.
Once cooled, eat as they are or top them with coconut oil! Store any leftovers in an airtight container in the fridge
Normally for muffins I do not use liners. However, I always recommend using them when dealing with coconut flour.
