Egg, Bean & Veggie Salad [Clean, GlutenFree, GrainFree, Lower Carb, High Protein, Vegetarian]...And A Dash of Cinnamon

I hope everyone had a lovely Easter Weekend and holiday. I was away for the weekend and although I had an excellent weekend, the most I got to do for the holiday itself were to eat some tasty mousse eggs I had picked up from a farmer’s market the day before!

That’s ok, though, because even though I LOVE the holiday (it’s my second favorite), I was lucky enough to go home last weekend. Even better, my parents staged an Easter egg/basket hunt (MY FAVORITE PART OF EASTER) and we had Easter dinner, as well. It was glorious. Some of my siblings even came home to join in on the festivities.

Yes…I still hope to have an Easter egg hunt and basket every year that I get to go home for the holiday. 1. It’s the best 2. I really really love it 3. Well I suppose there is no 3. I’m still a child at heart and love to find things, haha.

My mother still huffs and puffs about it, but really. It’s such a simple thing to hide some eggs! My dad, though, is such a great sport. He always has been. When I woke up that Sunday morning, he announced that he had hidden 104 eggs down in our basement for us kids. OMG I WAS THRILLED. This time, I was careful not to involve my ankle in my excitement like I did a few years ago. I Here is the post if interested in a leftover hard boiled egg dish (Savory Spinach, Chickpea and Egg Bulgar Bowl) . I don’t specifically talk about my ankle, but in my excitement of jumping around I came down and twisted my ankle quite terribly. So, I did not do that last weekend, thankfully.  Really, game on!

It was awesome. I did not find the golden egg (our Easter tradition), which on one hand makes me mad because I sort of looked in the place where it was hiding, but on the other hand I was happy because my sister found it. The first time in her life of 19 years haha- finally 🙂

Egg, Bean & Veggie Salad [Clean, GlutenFree, GrainFree, Lower Carb, High Protein, Vegetarian]

Servings 1 Salad

Ingredients

  • Mixed Greens
  • Tomatoes
  • 1-2 Hard Boiled Eggs
  • Cucumber
  • Bell Pepper
  • Broccoli
  • 2-4 T Kidney Beans
  • Nutritional Yeast optional

Instructions

  1. Wash your greens and veggies

  2. Slice all veggies and eggs

  3. Add Greens, veggies, Eggs and rinsed kidney beans to the salad. Top with optional nutritional yeast and your preferred dressing. Eat and enjoy!

Recipe Notes

Feel free to add as many veggies as you would like in the amounts that you would prefer. You can make as many salads as you want with whatever ratio you desire! 

Have a light hand on the dressing depending on which you decide to use!

  1. My mom did an egg hunt too and there is nothing like her Easter breakfast.
    This looks good and I’m all about eating all the veggies his this week after a long weekend of sugar and some foods that didn’t agree with my tummy.
