Time for this month’s redux post that is all about using the ingredients found in your pantry. Here is the prompt for this month’s challenge.


Spring Clean Your Kitchen:
Cook with at least 3 ingredients that are actually in your refrigerator or pantry right now. Try not to go to the store to buy anything new. Show us how you reduce food waste by being resourceful!

This is generally how I bake and cook. I just use whatever I have on hand, throw it together and hope for the best. Now is a great time for this in particular because I am about to move AGAIN. BLAH. I am so tired of moving, but I have a couple moves coming up in a very short amount of time, so I am all about that not buying anything else if possible and just using what I have on hand.

So what do I always have on hand? Oatmeal and protein powder for sure so why not use them to make my favorite form of oatmeal!?! This would be baked oatmeal, of course! I have plenty of recipes for baked oatmeal, and I love to just take various ingredients that I have on hand, mix it up with some oatmeal, add some liquid, throw it into the oven and bam 25 minutes later have a delicious, hot, satisfying breakfast. LOVE.

Double Chocolate Caramel Walnut Baked Protein Oatmeal [Clean, Vegan, GF]

Cook Time 25 minutes
Total Time 30 minutes
Servings 1 bowl

Ingredients

  • 1/3 cup old fashioned oatmeal
  • 1/2-1 scoop chocolate protein powder
  • 1 T psyllium husk powder
  • few dashes cinnamon
  • 1 T cocoa/cacao powder
  • 1/2 T chocolate chips
  • 1 T walnut pieces
  • water/liquid of choice
  • caramel syrup of choice

Instructions

  1. Preheat your oven to 350 degrees and grease an oven safe bowl

  2. Mix your oatmeal, chocolate protein powder, psyllium husk powder, cinnamon and cocoa/cacao powder in a bowl.

  3. Add water or your liquid of choice slowly until a batter forms. 

  4. Once to your desired consistency, fold in your chocolate chips and walnut pieces

  5. Transfer batter to your greased bowl and place in the overn for about 25 minutes or until cooked through

  6. Once done, poke holes in the baked oatmeal and pour over your caramel syrup of choice. 

  7. This will be very hot when it comes out, please be careful not to burn your mouth as you are eating and enjoying this delightful baked oatmeal!

  1. Loving the caramel walnut combo and I always have walnuts I buy in bulk for the holidays that I try to use up in the spring so this is perfect.
