Zucchini & Beef Egg Scramble [Clean, Low Carb, GF]...And A Dash of Cinnamon

It’s time for the March Recipe Redux!  Get ready to spring clean your kitchen and make a dish with the ingredients you have on hand. Egg scrambles are great for these types of meals. They are quick, super easy and very versatile to throw whatever you have on hand in. This one is packed with protein and is a great clean, low carb and gluten free meal.

This week not only am I celebrating my blog’s first anniversary (is that even possible?)  I am also celebrating a birthday myself, celebrating being done with my huge OKAPs test (an exam I have to take yearly with my residency), celebrating being done with a call weekend AND I am also presenting to you this month’s recipe redux post.

Here is the prompt that we were given to work with this month:

Spring Clean the Kitchen

Cook with at least 3 ingredients that are actually in your refrigerator or pantry right now. Try not to go to the store to buy anything new. Give tips on how to make a healthy dish out of whatever you have on-hand.

Uhhhh…. I don’t know if they realize this, but this is pretty much the story of my cooking life.

Step one: Decide that I’m hungry (Ok, I know, that’s like all the time)

Step two: Open pantry door, freezer door, fridge door and cabinet to assess the food situation and feel out what I’m hungry for.

Step three: Assemble meal with whatever I have on hand.

Step four: Eat and enjoy.

I rarely go grocery shopping, I just really don’t have time for it. However, it’s quite sad because I really enjoy grocery shopping. I know I know, most people are all like:

…But I hate grocery shopping! Blah!

I really, truly enjoy it. This is quite surprising actually, because I really don’t like other types of shopping.

Oh well, it’s probably for the best. I generally always come out with more than I intended, and like most, not always the greatest things especially when I’m hungry. I can totally vouch for the mandate of NOT GOING GROCERY SHOPPING WHILE HUNGRY because then you’re all like:

Ha! Can you relate?

Some other things I try to do to mitigate the above buying more than you need are:

  1. Do not use a shopping cart. At the most only use one of the tiny shopping baskets. (Granted sometime that thing gets SO heavy, but hey, think of it like an ARM workout? Am I right? )
  2. I also don’t use a shopping cart because I live in an apartment complex and the garage is a bit of a hike to my apartment. Therefore, I don’t want to have to make multiple trips. Sometimes, it’s a struggle and I try to carry more than I should, and am all like:
Or, more like “more than one trip”

3. Have a game plan. Know what you want. Have a list. Look at the circular online ahead of time to see what’s on sale. Buy in bulk so you don’t have to keep coming back.

Anyway, these are all things I’m sure you guys already know about and do. Now back to the prompt. Really, this is any recipe I have ever made and posted on this website. I have yet to specifically go out and buy something just for a recipe. Like I have said in the past, I’m more of just a ‘throw things together and hope for the best’ sort of cook. Therefore, I wasn’t sure which recipe to give you. Although I will say, a super easy way to spring clean with what you have is to throw everything you’ve got into an egg scramble!

Eggs are super easy, super forgiving and pair well with so many ingredients. They are also really great FOR you. If you eat eggs, please, please don’t waste the yolk. It really bothers me when food is wasted and this is a great example. The whole egg is good for you, and is a great source of protein. Just be more aware of how many you are eating if you have cholesterol problems.

Zucchini & Beef Egg Scramble [Clean, Low Carb, GF]

Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes
Servings 1 bowl

Ingredients

  • 1/4 lb ground beef
  • 1/2 cup diced zucchini (feel free to use more)
  • 2 T onion
  • 2 eggs

Toppings

  • 1 T mozzarella cheese (omit if paleo/dairy free)
  • salsa

Instructions

  1. Place your ground beef, zucchini and onion in a pan and brown. The grease from the beef should help to cook your zucchini and onion. If using super lean ground beef, add a bit of water to help the veggies steam

  2. Drain your beef and veggie mixture of any grease once your meat is no longer pink and the veggies are soft

  3. Add your eggs to the mixture in the pan and scramble

  4. Once cooked through, place in a bowl and top with cheese and salsa. Eat and enjoy.

Recipe Notes

  1. Whenever I buy meat, I separate it out once I get it and stick it in the freezer so that it is easy to grab when I need some. Feel free to use already cooked meat, or fresh.
  2. Add as many veggies as you'd like. They add great volume to your dishes
  3. This dish is easily multiplied if you have more than one mouth to feed.

  1. I would love to see the breakdown of each dish. Ex: Zuchini, eggs and sirloin with Katsup. Is there a good site to go to, to obtain that info.?
