Toasted Coconut PB Brownie Baked Oatmeal [Clean, Vegan, GF]

Ingredients

  • 1/3 cup old fashioned oatmeal
  • 1/2 scoop chocolate protein powder
  • 1/2 T cocoa/cacao powder
  • few dashes cinnamon
  • 1 T psyllium husk powder
  • water/liquid of choice
  • 1/2 T peanut butter
  • 1 T unsweetened shredded coconut toasted

Instructions

  1. Preheat your oven to 350 degrees and grease an oven safe bowl

  2. Add your oatmeal, protein powder, cocoa/cacao, cinnamon and psyllium to a bowl and mix

  3. Add your water or liquid of choice until a batter forms and pour into your greased dish

  4. Bake for about 25 minutes, or until baked through

  5. Meanwhile, toast your coconut (you can do this with a sandwich maker as shown, in the oven with your oatmeal for the last few minutes for example)

  6. When your oatmeal is finished, pull it out carefully and top with your peanut butter, followed by your toasted coconut. Eat and enjoy!

Recipe Notes

I just used water, but any milk will work. The oatmeal is very forgiving, if you add a bit too much, it will just take a bit longer to cook. The amount you add will also depend on how much psyllium you use and how absorbent your protein powder is.
