It’s time for some sweet potato baked oatmeal today! It’s packed with superfoods to keep you going all morning. With less than 10 ingredients this dessert for breakfast healthy baked oatmeal is an easy meal to make.

So I need to live vicariously through you guys for this past holiday and need you to tell me what you were and what you did for Halloween! I again did not participate this year. Actually, I haven’t participated in a whole lot of years. Last time was senior year of high school! Also, when I say participate I mean I actually dressed up and went trick or treating haha. #Nevertooold πŸ˜‰

It’s strange, I used to really really enjoy dressing up and going trick or treating, but after high school things really changed. The whole dynamic of Halloween seemed to all of a sudden to a serious shift away from fun and dress up and candy to something more not really my style.

I’m not going to lie, I think it’s mainly the fact that I get [super] stressed out trying to think of a good costume. One that isn’t just full on “slutty”, (which for some reason the vast majority of girl’s costumes tend to be… )which I don’t appreciate especially when it’s also generally like 30 degrees on Halloween night haha. However, now that I’ve moved, it’s still in the 70s at night and glorious. Thank you residency for that.

It also doesn’t help that I’m generally working on Halloween, or not around. Last year I was covering the pediatrics floor and this year I was on call (story of my life recently. I feel like I”m always on call!). You may say, but you were not on call over the weekend so you could have gone out and done something then, right? Right. Except for the fact that I ended up catching up on sleep! YAYAYYAYAYA! You guys know how important that is. Let me recap my past week.

Last weekend I was on call (for us that is Friday 7am to Monday 7am). Friday day was pretty decent, I even got to learn how to do Botox and Kybella! Guys, not going to lie, I really liked it. You can really do a lot with it if you know your facial muscles and their actions and it’s like art if you take the time to think about what you are trying to accomplish. It’s cool too because you can use it (obviously) for cosmetic purposes, but it can also be used as a medical treatment for some things.

Anyway, the night was ok and I got to sleep a bit, but was awoken at 1:30 am and was up dealing with a patient until 7pm that night. I got a few hours that night before getting called by my attending to do an emergency procedure on one of her patients and then got a string of calls that day. Then I got to sleep a bit that night. The next few days I was up at 430am and then back on call Wed and Thursday. Thursday night I got called at 1:20 am and did not get to go back to sleep that night.

That day, to make matters worse, I essentially had to run clinic by myself because my third year and my other first year were out. I was TIRED. By the time I finished with that and checking in on other consults that I had to follow in hospital I got home around 7pm and crashed at 8pm. I didn’t get up until 830 AM. I was still super tired on Saturday, but able to focus a lot better. I took it easy during the day and slept for a while then that night too and didn’t get up until 945 AM on Sunday! As you know, I was on call on Halloween Day. Therefore, I’d LOVE to hear about your Halloween festivities!

Meanwhile, while you’re telling me all about your Halloween fun, I think you should make thisΒ Toasted Coconut, Sweet Potato and Walnut Chocolate Protein Baked Oatmeal!

 

Toasted Coconut, Sweet Potato and Walnut Chocolate Protein Baked Oatmeal [Clean,Vegan, Gluten-Free]

Prep Time 10 minutes
Cook Time 25 minutes
Total Time 35 minutes
Servings 1 bowl

Ingredients

  • 1/3 cup old fashioned oatmeal
  • 1/2 scoop chocolate protein powder
  • 1/2 sweet potato
  • 5 walnuts (crushed)
  • ~1/2 T unsweetened shredded coconut
  • few dashes cinnamon
  • 1/2 T psyllium husk powder
  • 1/4 t nutmeg
  • water/liquid of choice

Instructions

  1. If you don't have a cooked sweet potato, I prefer to pre-cook mine in the microwave. Take a fork and stab the potato multiple times in all areas. Place it in the microwave and cook for 2-5 minutes until soft. Let the potato cool for a minute before peeling and dicing

  2. Meanwhile, while your sweet potato is cooking (if you need to soften it). Preheat your oven to 350 degrees and grease an oven safe bowl

  3. In a bowl, mix together the oatmeal, protein powder, walnuts, cinnamon, nutmeg and psyllium husk powder

  4. Fold in the diced sweet potato

  5. Add water, or liquid of choice until you get a thick, but pourable batter

  6. Pour the batter into the pre-greased bowl and top with coconut

  7. Bake for ~20-25 minutes or until cooked through

  8. Eat and enjoy!

Recipe Notes

  1. The amount of liquid you use will depend on how absorbent your protein powder is and how much psyllium husk powder you use (or don't use).Β 
  2. I like to place the coconut on top because then it gets toasted, feel free to mix it in if you prefer.

  1. So… it’s funny that you post that Mean Girls meme because that happened to me in real life! I was 13 and invited to my first Halloween party. So I of course dress up all decked out in a Halloween costume and when I arrived, all of the girls were dressed sexy. I sat in a corner by myself for the night. Fun times. Ah well.
    Holy moly girl that’s a lot of work. The shift work must be intense with such little sleep sometimes :/ I admire you for it. You are helping people, we need more people like that in the world.

    1. Oh no! Yeah it’s happened to me before too. I bet your costume was awesome though? What did you dress up as? It has been a lot of work and its not even shift work so there’s no definite start and end time like you have with shifts. Thanks πŸ™‚ your kind words mean a lot.     I’m on inpatient service right now so turning on my oven when I have zero motivation to turn on my oven when I get home, but this just might do the trick! πŸ˜› I’m sorry to hear that you had to run clinic on your own! That must have been really stressful!

    1. Haha! That would be hilarious on your cat. Oh the floors. I do not miss inpatient services one bit. So glad to be done with that. I know what you mean though by no motivation! I’m not going to lie…I’ve had serious serious lack of motivation during the week to do anything, especially since I’ve been so so tired. But if I’ve got a weekend morning off…you can bet things like this recipe will get me motivated haha. I hope it does the trick for you too! I also hope inpatient isn’t too too bad. What service are you on? Clinic ended up being not to to bad! I was successful and ended up finishing at a good time even with what little sleep I had had. I got lucky though because I didn’t get called away for an emergency ED consult. THAT would have sucked and really slowed things down if I had to leave clinic for awhile

  5. I didn’t dress up really either. I just felt too busy. I did put on a sparkly skeleton sweatshirt to get into the spirit.

    1. Oh I love sparkles! I wore orange and black to work that day, but I was on call so didn’t do anything crazy. I love baked oatmeal too! I go on really really long baked oatmeal kicks. I eat it year round (however my longest kicks tend to be in the summer…strange I know, but who knows lol). Thank you for hosting!
