Time for the Recipe Redux post! This is the last challenge for the year and fittingly sends off 2017 with a redux recipe from a cookbook. Here is the prompt we got:

Grab a Book and Cook

We’re playing a little party game at the end of 2017: Grab your nearest cookbook and ReDux the recipe on page 201, 17, 217 – or any combination of the number ‘2017.

As you may recall, we played this game at the end of last year. I was on an away rotation with not my usual pantry and no cookbooks so ended up using the Protein Pow E-book. I redux’ed these super yummy cookies last year. (Chocolate Amaretto Protein Cookies [Clean, Vegan, Low Carb, Gluten Free] if you are wondering).

This year, I am in my apartment and do have a very small selection of cookbooks that I rarely look at. I had my roommate help me go through the books and mark all the pages with the 2017 combo to choose from.

To narrow it down further, I decided that I would prefer to have all the recipe ingredients here already (or enough that I could change around anything I didn’t have). So, that ended up knocking out quite a few. Then, since it’s pretty cold here and we don’t have the heat turned on, I decided that neither I, nor likely any of my readers would want a cold recipe during this time of year. That also narrowed it down quite a bit.

I currently am making a slow cooker cabbage stew, so I figured that I already have dinner so didn’t want to make another dinner. Then, I figured turning on the oven would be  a lovely idea and that I wanted something super simple. Why? If you haven’t noticed, I’m all about only a few-ingredient, super simple recipes around here. I don’t have time for any crazy extensive recipes and I know most of you don’t either.

I actually hadn’t really looked through this cookbook before, but I am for sure going to take a closer look. It has a ton of super simple, few-ingredient recipes in it! The one I chose came from page 207 and was easy to adapt and to make. I mainly changed around the ratios and added some spices. So, without further ado I present you this really easy roasted carrot recipe (because roasted vegetables are the best)! Even better, they taste a lot like sweet potato fries ;). Major win.

Spiced Maple Roasted Carrots [Clean, Vegan, Lower Carb, Gluten Free]

Prep Time 5 minutes
Total Time 20 minutes

Ingredients

  • Carrots
  • Pure Maple Syrup
  • Cinnamon
  • Nutmeg
  • *Cooking Spray

Instructions

  1. Preheat your oven to 425 Degrees

  2. Clean and slice your carrots into strips*

  3. Spread them out on a cookie sheet

  4. Optionally spray them with an olive oil cooking spray

  5. Take a basting brush and baste the carrots with maple syrup

  6. Sprinkle the cinnamon and nutmeg over top

  7. Roast for about 15-20 minutes, making sure to turn every 5 or so minutes until done.

Recipe Notes

This recipe is easily adaptable to however many you want to make. The raw picture shows 4 carrots for a measure (It's just me!) Think around 2 carrots per person.

Please be very careful when cutting up your carrots. 

The thinner you make your carrots, the quicker they will cook. So keep a close eye on them.

    1. Yes I was pleasantly surprised by the book and the recipe! I’m for sure going to take a closer look at it. Happy holidays to you as well! Thankfully, my attending let me come home for Christmas since I was able to for Thanksgiving. So this year I’m able to spend this holiday with my family for which I am thankful. I hope you are also able to enjoy the holiday!
