Then, feel free to try out this white chocolate peanut butter cookie dough protein notmeal. Depending on the chocolate chips used, this can be vegan. Otherwise, it packs a good dose of filling fiber and protein!

These are some of the things that have happened lately. Can anyone relate?

  • I slept in until after noon

    As you know, I front-loaded my shifts very hard in order to have a bit of time to pack up my life and move cross country. It was exhausting to be sure, especially since I did a run of 12 days straight and it was all like:

But, holy crap! I guess I hadn’t realized how tired I was. To give you a baseline, me sleeping in after say 8am is big news and here it was afternoon!

  • I went to my first BBQ of the season!

Yeahhhh… I did not get to go out Memorial Day weekend because I was working…and worse working nights. So that didn’t work out so well. However, this one was great with major props to the grillmaster. It was kebabs FOR DAYS…shrimp, veggie, meat and chicken. So good. Plus, all the sides and dessert! It was all like:

  • I did not have to work!

This one is pretty self-explanatory. I am done! Yay! Well, at least until I start my next stage of life next week. All I can say, not waking up to an alarm? GLORIOUS! The moment it dawned on me that I didn’t have to set an alarm? It was all like:

  • I had to wear real clothes

Major shock. I’ve been in scrubs for a long while now. When I come home, I put on sweats of some sort. I have not been required to put on an actual outfit since my last rotation. I would like to think I did a better job than this guy though:

  • I am seriously lacking ingredients

I have run out of so many things it’s crazy! But, this is a good thing since I have actively been working on using up my food stores. I would say I’ve been doing a pretty good job I mean look at the state of my freezer:

Yeah…just  bit of a difference, no? Lol. So, yeah, I’ve had to get creative. I debated whether to share an oatmeal recipe with you since I have lots stored for you and this post has got me reminiscing. But, I have been eating a porridge based on coconut flour instead in the mornings which is great because its no-bake and can be eaten right then, or chilled overnight to make extra thick. Since yesterday was apparently peanut butter cookie day? I thought I’d share this white chocolate peanut butter cookie dough protein notmeal recipe with you.

Ingredients
Peanut Butter Dough Balls
Servings: bowl
Instructions
Main Bowl
  1. Easy peasy just add all ingredients into a bowl (can save white chocolate/peanuts as toppings or feel free to mix them in)
  2. Depending on how thick/thin you want it. Slowly add your liquid of choice and mix ingredients together until desired consistency is formed*
PB Balls
  1. In a separate bowl, add your peanut flour, extract if using, cinnamon in a bowl. SLOWLY add liquid of choice (start very small) and stir until the "dough" can be shaped into balls.
  2. Once formed, top your bowl with as many as you would like!
  3. Either eat your bowl right then, or store in in the fridge for later. The longer it sits, the thicker it will get.
Recipe Notes

 

  1. I make them the night before and eat them straight out of the fridge in the morning for breakfast.
  2. As a reference, I personally like mine super thick, and still require at least a cup of liquid.
  3. I don't prefer super sweet. I don't use sugar in any of my recipes and suggest starting with the extract and cinnamon to up the sweetness. The white chocolate chips also increase the sweetness.
  4. If you don't have peanut flour, you can use peanut butter for the bowl. The pb dough balls will not work with peanut butter.
  5. If you are not used to psyllium husk powder, start SLOW and LOW and be sure to drink plenty of fluids.

  1. “notmeal” haha love it! Sounds like a hectic time for you. Glad it’s winding down somewhat.
    I don’t know how you had time for anything! The freezer pictures are funny ;p
    I’m going to have to try and track down some vegan white chocolate chips – this sounds great!

    1. It’s been crazy. I’m not sure if it’s going to get better, or worse with my next step. This next year at least might be worse! AH! Hahah we’ll have to see. I’m not sure how I do either. Honestly, there are so many things I want to do too and just don’t have the time for. I need one of those time things that Hermione Granger had on Harry Potter lol.

  2. I guess you really did need the sleep! I did the same thing today as it was the first day of summer and slept through my alarm and didn’t wake up until almost 10! That is crazy for me and the girls were still sleeping too, I guess we all needed a little extra sleep!
    Next time I’m craving some cookie dough I’m making this! Or maybe I should try it for the girls for breakfast and see what they think since I have everything to make it.

    1. It was yummy! I loved the crunch the white chocolate chips and peanuts gave it! I’m a young doctor and just finished up my intern year a few days ago. Sweats and scrubs are the best. So comfy. I love wearing pjs to work when I’m on rotations that require scrubs. 25 years though! That’s amazing. I’d love to hear any stories if you have them!

    1. Yay thanks! I NEED tons of sleep. I’m pretty sure I’m missing years of it by this point haha. The cookie dough balls with with the other toppings are so yummy. I love the crunch that the peanuts and white chocolate chips give to it.
