Try this clean recipe for your morning breakfast! It has a great combination of fats, protein and carbs to get your morning off to a great start.

So, I didn’t sleep last night.. AT ALL.

You see, sleep and I, we don’t get a long too well. I don’t get it. I even try to be so nice to it! Not fair. I obviously got the short end of the stick for this one, and it irks me every time my family members are all like “Oh I’m just going to take a nap for hours and then still be able to sleep tonight- no problem!”.

Once I decided to stop pretending I was asleep to see if I could trick myself  and get up and around, I thought to myself, “We need a game plan, stat” in order to get through this day.

FALSE: Rule #1= Caffeinate

I found I had some leftover coffee in my mug from yesterday, but thought about the number of patients on the schedule and decided it was best to brew a whole pot. I packed a to-go mug and- not going to lie- I seriously considered bringing two mugs. However, I thought double fisting coffee mugs might be a dead give away to my predicament and decided it was better to just bring one.

When that was decided, along with of several cups two mugs of coffee, I turned to breakfast. I knew first and foremost that chocolate had to be in the picture. EXTRA CAFFEINE!! I said!! YES! (and of course dessert-for-breakfast is always a goal?). So, below I introduce a baked breakfast oatmeal cake for you to try! A nice/ warm/melty chocolate/ baked protein oatmeal cake with homemade cinnamon peanut butter to top. Hemp seed protein has a very earthy taste. I personally like it a lot and love that it is a clean, plant based protein powder with a whopping dose of fiber. I use the one from Vitacost ( a site I love and use all the time!). Needless to say, I was pretty hopped up on caffeine by the time I left for work. As I was driving, my car started creaking. It’s never done that before. My brain went to the most logical solution, “Obviously all this caffeine has made my hearing supersonic”. LOL! (In retrospect, I wonder just a tiny bit because my car made no such noise on the way home)

Anyway, I spent the day trying to not let anyone know I had coffee oozing out of my pores. In my book, I was a success. I heard no “My! How your eyes pop today!” comments from patients and no “….Why…are you….twitching…?” comments from my attending. Hehe.  WIN!

The morning, in particular, went great. However, by the PM. I was dragging, and had a headache. I was all like…

Alas, I told myself regardless I was to have NO more caffeine. You see, it was later in the afternoon and caffeine has a half-life of about 5-6 hours give or take your metabolism of it.  BUT, I did make it through the day! High- five, fist pump!

I thought I was done for the day with patients, but when I got home, EMS was at my complex. It was a person that was super drunk slumped over in the doorway. This person had just tried to make it home from the bar. This person tried to say he wasn’t drunk at all. These are the words this person said, ” I swear I’m not as think as you drunk I am” Yeah ok…. you sound like yoda… But you guys can be make you own opinions on the matter.

Ingredients
Servings: baked oatmeal
Instructions
  1. Preheat oven to 350 degrees and grease an oven-safe bowl
  2. Combine all ingredients in a mixing bowl
  3. Add water or liquid of choice until batter thins to desired consistency
  4. Pour into bowl and place in over for ~25 minutes or until cooked through
  5. Take out of oven with care, top with nut butter and enjoy!
Recipe Notes
  1. Grind flaxseeds if you do not already have them pre-ground
  2. If you are not use to psyllium husk powder, (I use the one from vitacost, use the link above to save) start with a smaller amount (try 1/2-1 t to start) and work your way up.
  3. The best would be to use no-sugar added chocolate chips to make this recipe super clean
  4. Cook time will vary depending on how much liquid and psyllium husk powder you add. I like add a lot of powder and a lot of water to get a larger amount of baked oatmeal cake.
  5. I make my own nut butters, if you are buying nut butter make sure there is no added sugar or chemicals. The best are ones with just the nut (aka just peanuts for peanut butter, or just almonds for almond butter, etc)
