Considering I’m pretty much always budget eating I knew that this shouldn’t be all that difficult. At first I vaguely remembered that the theme has something to do with low costs and had this awesome snack recipe that I wanted to share. However, when I actually read the prompt I decided that it had to be a meal, not a snack.  Sorry if you just perked up (like I would have):

So, after that I was thinking well maybe oatmeal! Oatmeal is super affordable especially when you buy it in bulk. I usually get it for ~75 cents a pound. Then, I realized that almost all of my oatmeal recipes call for protein powder and often nuts/ nut butter, as you probably are already aware. Granted, since I only use a half scoop of protein powder (and always at 10 dollars or less per pound so it’s more cost effective) and only a few nuts in each bowl the serving would easily come out to less than 3 dollars a serving. However, I decided that protein powder doesn’t work for everyone. That knocks out quite a few of my recipes though!

I know, I know I’m thinking the same thing. I also decided that nuts can be quite expensive, so no nuts either. To continue, even though meat can be affordable, especially on sale and in bulk, that I wasn’t going to have a meat-centric dish. Finally, I decided that it wouldn’t have cheese in it either since cheese can sometimes also be quite expensive. Also, no crazy flours.

I mean I certainly don’t have time for that. You guys know my meals are simple, easy and quick because well, they have to be :(.

Therefore, I present to you a quick, easy and clean egg scramble! It only needs 5 ingredients, has satisfying protein, fiber and carbs in it. It would be an excellent post-workout meal (strength or cardio), too! I would eat this for dinner, but feel free to have it for any meal of the day! It also fits the budget requirement.

Please remember that often things bought in bulk are cheaper (but make sure to compare to make sure!) and watch out for sales! I only buy eggs either when they are on sale for a dollar, or less and/or in bulk to make that requirement. Potato, Tomato and Onion Egg Scramble [Clean, GF]

Prep Time 5 minutes
Cook Time 5 minutes
Total Time 10 minutes
Servings 1 scramble

Ingredients

  • 2 eggs
  • 1 potato cooked
  • 5 cherry tomatoes halved
  • 1/4 t minced garlic
  • 2 T onion

Instructions

  1. Cook your potato if you don't already have one cooked (see notes for cooking options)

  2. Dice some onion and throw it into a greased pan until it is translucent

  3. Meanwhile, dice your potato (you can throw this in the pan as well to brown if desired) and halve your tomatoes

  4. Whisk your eggs together and add the garlic, tomatoes and potato pieces (if not already in the pan) and pour into the pan. 

  5. Scramble everything together and cook through!

Recipe Notes

Potato: If you don't want to use the oven to bake your potato, you have 2 quick alternatives. 1. Wash your potato and stab all over with a fork. Place in the microwave for ~3-4 minutes or until tender. 2. Dice potato after washing it and boil in a pot of water until tender. Drain water and then use the diced potato. I often brown the potato in the pan once the onions are just about done before adding the eggs.

Onion: I normally just peel (*crack) some onion off layer by layer since it's easy. Then, in the pan, I add just a tiny bit of water to steam the onions so that they cook quicker. 

Tomato: Don't have cherry tomatoes? No problem! Use whatever tomato you have on hand. No salt added diced tomatoes in a can work, as well!

  1. Great scramble is a terrific way to start the day! Eggs got a bad rap (imo). They are a great protein and so affordable. Love that you’ve made them the star of the show!
