Peanut Pumpkin Muffins [Clean, LC, GF, Vegan] Single ...And A Dash of Cinnamon

Looking for ways to use that can of pumpkin puree? Why not try out these peanut muffins? They still give you some pumpkin that you are looking for, but are full of other flavors and textures, as well! They are each a great source of fiber and healthy fats. All you need are 7 ingredients and a half hour to make these yourself!

Well hello…October? I’m not sure where you came from, but welcome I suppose. Since it’s October now that means I need to start packing for my next trip! However, it also makes me realize that I never told you guys about my San Diego trip! I’ll give you some of the highlights on that one.

I had never been to San Diego before, but I had heard lovely things about it and knew that I for sure wanted to go the Zoo. The zoo was really my only requirement, because well, I’m still a child haha. It was a quick weekend trip, but it was filled with food and fun!

First and foremost, I want to talk about an AMAZING breakfast place that we went to before heading to the zoo. It was called Hash House a Go Go. 1. Yes I realize it’s a strange name, but don’t let that you dissuade you. 2. The portion sizes are HUGE which is a big plus for me. I just got your typical eggs, potatoes and biscuit, but even with my enormous appetite I could barely eat like a fourth of it.

I wish I would have known because then I would have planned better for leftovers! Since we were heading to the zoo, I instead packaged them up and found a homeless man to give them too. Can’t let good food go to waste.

Now onto the zoo. Quite a spread! I love looking at the animals. I wish they had tamarins though ( I really like them). You can certainly get your workout in so be sure to wear tennis shoes! I also may or may not have seen the 4-D movie. It was an Ice Age one and it was super funny. I do not like getting wet, though so I am not a fan of when they sprinkle water.

This beauty was just roaming around free! Aside from the zoo, some other highlights were the impulsive Brad Paisley concert, a hilarious night at the American Comedy Co. and a hike down the Ho Chi Min trail near La Jolla.

How cool is that?! It’s hard to see in the picture, but there you have to go down that ravine. There are other places where you are walking over boards, hugging cliffsides and walking down with a rope. It’s a route that surfers use to get down to the beach. Super fun if you are up for the challenge. I recommend being in pretty good shape and able to maintain your balance well before attempting.

Over all a very cool city. Have you guys ever been?

Now that it’s October you know pumpkin has been all the rage now for a few weeks. I’ll just give you a little recipe to add to your pumpkin love! They are great to take with you, or top with a bit of coconut oil to add some good fats to your muffin.

Peanut Pumpkin Muffins [Clean, LC, GF, Vegan]

Prep Time 5 minutes
Cook Time 25 minutes
Total Time 30 minutes
Servings 8 muffins

Ingredients

  • 1/4 cup Peanut Flour
  • 1/4 cup Coconut Flour
  • 1/4 cup Cornmeal
  • 1/2 t Baking Powder
  • few dashes Cinnamon
  • few dashes Nutmeg
  • 1/2 cup Pure Pumpkin Puree
  • Water/Liquid of Choice
  • Coconut Oil optional

Instructions

  1. Preheat your oven to 350 degrees and line a muffin tin with paper liners

  2. Add your pumpkin and then slowly add water (or your liquid of choice) until a batter forms

  3. Scoop out into the muffin tins and bake for ~25 minutes or until clean.

  4. Once cooled, eat as they are or top them with coconut oil! Store any leftovers in an airtight container in the fridge

Recipe Notes

Normally for muffins I do not use liners. However, I always recommend using them when dealing with coconut flour.

  1. San Diegoooooo! I haven’t been there in ages but it’s a gorgeous place to visit (and one I definitely wouldn’t mind relocating to ;P ). These muffins look amazing!! :D!!

    1. I get mine in bulk off of amazon (12 1 lb bags at a time bulk haha) bc when I was buying it, that was the cheapest by FAR. I use protein plus peanut flour. You can get it at a lot of places online now. A lot of the online health stores have it and I’ve even seen it in some grocery stores. I’ve never es used it, but I believe pb2 is similar. I hope you get some! I love using it!
