Just a quick hello to tell you I made it back safe and sound! Things are crazy since I’m just getting back (from vacation and from my last rotation since I was out of town the whole time and hadn’t even had a chance to unpack fully from the move) and starting a whole new rotation, and I just have so much to do and learn (including the computer systems I was trained on back in early July…but haven’t used yet. GAH) and now I have to also deal with crazy, terrible brutal call too. So…I’m a bit overwhelmed.

BUT, I can’t wait to tell you about some of my trip! I’ll have to tell you about it piece-meal, though. I hope that’ll be ok.

Anywho, I decided to check out Mindo, Ecudaor. First, I’ve never been to South America before. Second, they have a rainforest (the Cloud Rainforest), that caught my eyes a few years ago when I read a post about it and being able to traverse across part of the canopy!  (Yes, I bookmark travel ideas and most places stay there for years, but I LOVE to travel) (In that post, I’m also intrigued by the tidbit on Romania, so that’s been on my list, too, just in case you wanted to know of course lol). I also wanted to do an active trip since I needed the exertion so this place was perfect for that. Lots of adventure and lots to explore!

With the whole hub-bub about Zika, and the fact I’d be in the rainforest with plenty of bugs I knew insect repellent was a priority. Even though I pretty much bathed in the stuff, I did not come out unscathed. I got bit by who knows what, and plenty of times. My legs are..pretty gross.

Lots of bites and a few random bruises? Who knows.  Well, I know some of the culprits based upon the conversation with the lodge owner (not the lodge from the post I linked to above, though) which was as follows, in a Spanish accent, briefly:

Him: “We have no Zika virus here”

Me: “I’m not really worried about it, but that’s good to know!”

Him: “We do have blood-sucking black flies though!”

Me: “Hmm…that sounds..lovely. Just, perhaps a word of advice…? I think you should probably just stop after the no Zika part. ” Hehe

Anyway, stay tuned to hear more about my adventures! In the meantime, try out this tasty and simple oatmeal recipe. It’s so simple, but easily a favorite of mine. The key? You MUST cook part of the banana with the oatmeal. Otherwise you can modify as you see fit 🙂

PB&B Oatmeal [Clean, Vegan]


Prep Time 2 minutes
Cook Time 5 minutes
Total Time 7 minutes
Servings 1 bowl
Author AZ@...And A Dash of Cinnamon

Ingredients

  • 1/3 cup old fashioned oatmeal
  • 1/2-1 banana
  • 1 T peanut butter
  • 1/2-1 T psyllium husk powder
  • few dashes cinnamon
  • water/liquid of choice

Instructions

  1. Mash 1/3-1/2 of your banana in the bottom of your microwave friendly bowl, or pot

  2. Top with oatmeal and liquid of choice

  3. Cook oatmeal via your preferred method

  4. While letting cool, slice and quarter your remaining banana

  5. Stir in the rest of the ingredients aside from the banana until smooth and creamy

  6. Fold in banana. Eat and enjoy!

Recipe Notes

  1. The amount of liquid will depend on if you use psyllium husk powder. If unsure, feel free to use the instructions on your oatmeal package. Or, feel free to ask how I make mine.
  2. If you have never used psyllium husk powder before, start low and work your way up. Be sure to drink plenty of water. 
  3. I make my own, but if you use store bought try to use one without any added sugar

  1. Looks like the perfect brekkie to start the day full of energy. I’ve never tried putting peanut butter in my porridge but I’ll be doing that tomorrow: love the taste of peanuts. #RecipeoftheWeek

    1. Oh man I hope you love it! I LOVE peanut butter in my oatmeal. It makes it have such a different consistency, much creamier. I also highly recommend keeping some peanut butter on your spoon after you are done mixing the rest of it in to get extra peanut butter in every bite!

    Glad that you made it back safely–I’ve always wanted to go to Ecuador (especially for that Cloud Rainforest), so I’m hoping I’ll be able to go there someday too! *-* Those photos are gorgeous! Can’t wait to hear more about your adventures!

    (Boo on the bug bites though! I got eaten alive when I went to the Dominican Republic, but took it for the team because no one else in my room got any bites at all? ._.)

    1. I’m not one for a crazy amount of ingredients. I certainly don’t have time for it haha. Oatmeal for breakfast (at least my first breakfast) is pretty much an always in some form or fashion. I love it! I hope you do get to go sometime. If you do let me know and I can give you some recs! I’m hoping to be able to get to post something else about it soon but so far its been way way too crazy with this new rotation I’m at to do much of anything. Yeah, the bug bites are still there…but healing at least and thankfully not nearly as itchy haha. Oh the DR. When I went there a few years ago, it was a bit of a crazy story haha but my one friend got eaten alive too there actually but I didn’t get many. Interesting! Way to take one for the team though. I’m sorry it had to be you 🙁 but I hope you had an awesome time in the DR!
