There are no specific amounts for this recipe so just grab enough ingredients to make how ever many tacos you (and whomever else you are cooking for) desire! Feel free to change up the meat (or sub if vegan/vegetarian) depending on what you have on hand or prefer.

The theme for this month’s recipe redux is tacos!

February 21 is a Tuesday. So show us your healthy, creative take on the taco.

Tacos are great because you can really stick whatever you want in whatever sort of “taco shell” you want and have yourself a lovely taco. I really like the flexibility this gives because you should be able to make tacos fit into your dietary preferences regardless of what that entails for you. Need some help figuring out substitutions to make for your taco recipes? Just shoot me a message, or comment below and I would be happy to give suggestions!

Anyway, for this month’s theme I decided that I really wanted to try to flex some creative juices and go outside of the typical “taco” box. I was all like:

Therefore, I apologize ahead of time if you were hoping for a traditional/Mexican themed taco because (obviously…I guess.. given the title and picture) that is not the case for this post.

I do hope that you like this Mediterranean inspired taco recipe instead, though! If you already have steak or something like it leftover then feel free to use that!

Greek Inspired Tacos [Clean]

Author AZ@...And A Dash of Cinnamon

Ingredients

  • whole wheat pita bread
  • meat of choice*
  • hummus
  • sundried tomatoes
  • kalamata olives

Instructions

  1. If you don't have leftover meat, then first prepare your meat of choice*

  2. Meanwhile, slice your pita bread so that you can stuff the middle (either 2 or 4 pieces depending on size)

  3. Set out your hummus (click link for easy homemade tahini to DIY), sundried tomatoes, olives in bowls

  4. Chop your lettuce into small pieces (I used romaine, but anything will work)

  5. Once your meat is finished cooking, arrange all your dishes on the table and start putting together your tacos!

Recipe Notes

I used steak for this recipe. It can be lightly seasoned with salt/pepper or seasoning of choice and either skillet cooked (slice thinly) or grilled and then sliced.

Feel free to use whatever you would like, chicken, lamb, vegan choice if you do not want to use red meat

  1. Oh I love traditional tacos, but I enjoy trying new & creative taco recipes just as much. I really like the idea of combining sundried tomatoes and hummus together. This sounds like a tasty taco!
