I don’t know if you know this, but pistachios are awesome nuts! They make for a great snack especially since you can eat so many of them for a reasonable calorie count. Think ~50 pistachios (49) for a little over 150 calories (158)! You guys know I am all about quantity so this is great. So when Wonderful Pistachios asked for a recipe, of course I was all over that!

Pistachios are considered a “Fit Nut” because they have one of the highest protein/fiber combos in nuts (6 grams of protein and 3 grams of fiber per serving). Eating a diet rich in nuts, such as pistachios, has been shown to be heart healthy. It’s possible that eating 1.5 ounces per day of nuts may reduce the risk of heart disease. The unsaturated fat and Omegas in nuts are likely contributors. Antioxidants that pistachios give are also likely contributors.. Notice how pistachios are vibrant red/purple/green? Bright colors are a good indicator of antioxidants. Therefore, pistachios are definitely a “colorful” nut.

For those of you who have trouble knowing when you are full and overeating (looking at myself..) the In-Shell nuts are great. They are considered to be “Mindful Nuts” because it takes time to open and eat each nut. Therefore, you are giving yourself more time to send yourself signals that you are full. This, in combination with the healthy fats, protein and fiber are also helping satiate your hunger. It’s no surprise that studies have shown that people tend to eat less (41% less calories) when eating in-shell nuts versus non-shell nuts. For example, people given access to all the nuts they wanted to eat, ate about 211 calories for non-shelled nuts, to about 125 calories for shelled nuts. Wonderful Pistachios calls this the “Pistachio Principle”.

So it’s great you can eat so many of them!

Some theorize that part of this because you have a visual cue of how many  you have eaten, and some because of what I mentioned above. You are giving yourself more time to send “full” signals.

Due to this, pistachios can be helpful to those on a diet, or for those who need to lose weight. So, pistachios could also be known as a “Skinny” Nut. You can eat a lot more of them for less and if you have the shell on you will overall tend to eat less of them. It takes more time especially if you get those ones that are tricky to open, thus giving yourself more time to send full signals.

So you can take pistachios to be a “happy” nut because you can snack happily! They are tasty and serving size per day (don’t go overboard on nuts!) can fit in well with a balanced and healthy diet.

Flourless Chocolate Turmeric Pistachio Protein Cookies [Clean,Vegan, GF]

Cook Time 7 minutes
Servings 10 cookies

Ingredients

  • 1 oz Wonderful Pistachios crushed
  • 1/3 cup old-fashioned oatmeal ground
  • 1 scoop chocolate protein powder
  • 1/2 t baking powder
  • 1/2-1 T cocoa powder
  • few dashes cinnamon
  • few dashes turmeric
  • few T water/liquid of choice

Instructions

  1. Preheat your oven to 350 degrees and grease a cookie sheet

  2. If you have shell-on pistachios, remove the shell and gently crush each half. If they are pre-shelled, then crush them.


  3. Take your oatmeal and grind it into a flour. Add it to a bowl

  4. Add your chocolate protein powder, cocoa powder, baking powder, cinnamon, turmeric and approximately 2/3rds of the pistachios to the bowl and mix.

  5. Slowly add your water or liquid of choice until a thick batter develops.

  6. Scoop out the batter onto your cookie sheet until you have used all of the batter. 

  7. Use the rest of the pistachios as toppings for the cookies.

  8. Bake for approximately 7 minutes, or until cooked through. 

  9. Remove from the oven and cool on a wire rack. Eat and enjoy! Store any left overs in an airtight container.

Recipe Notes

-I just broke the pistachios with my fingers. Alternatively you could gently pulse in a food processor or even leave them in halves if desired.

-The amount of liquid you add will depend on the absorbency of your protein powder. Add tablespoon by tablespoon until you get your desired consistency.

-This recipe is easily manipulated to make more cookies as desired.
