Strawberry Coconut Protein Muffins [Clean, Vegan, Low Carb]

Ingredients

  • 1/2 cup coconut flour
  • 1-2 scoops vanilla protein powder
  • few dashes cinnamon
  • 2 T psyllium husk powder
  • 2 T flax seed ground
  • 2 t vital wheat gluten
  • 1/4 t baking soda
  • 1 t apple cider vinegar
  • 1/4-1 cup strawberries crushed
  • 1 1/2 cup water

Instructions

  1. Preheat your oven to 350 degrees and line a cupcake pan with liners

  2. Mix all of you dry ingredients together

  3. Add your liquids and mix

  4. Fold in your strawberries

  5. Let sit for a few minutes, then divide the batter among the liners

  6. Bake for about 20 minutes or until done

  7. Cool on a liner. Eat and enjoy. 

  8. Keep leftovers in an airtight container in the fridge.
