Simple Spring Green Egg Bowl

Ingredients
Instructions
  1. Scramble eggs to taste. (I already had a huge batch of scrambled eggs made)
  2. Add all ingredients to microwave safe bowl
  3. Microwave on high for 1.30 or 2 minutes or until slaw mix is soft.
  4. Top with hot sauce, stir and enjoy!

Let’s customize!

  1. Don’t like peas? Feel free to sub in any vegetable such as green beans.
  2. Want more veggies! Feel free to add more in!
  3. Need more protein? Up the number of eggs, but don’t go more than 4, or add in meat of choice
  4. Don’t like cabbage? Swap it out for spinach, kale or other study green
  5. Need more fat? Top with mozzarella cheese
  6. Need more carbs? Try adding a half cup of cooked brown rice, barley, or bulgar
