Mexican Slaw Egg Bowl

  1. Stab sweet potato all around with a fork and place in microwave for a few minutes (I do about 3.30 or 4 min depending on size)
  2. I happened to have eggs already scrambled, but if you don’t scramble an egg now and add to bowl along with the cooked ground beef.
  3. Add a great big dollop of salsa. More or less depending on taste. I love salsa so I added probably at least 1/4 cup
  4. Add big handful of slaw. (I probably added 3/4 cup)
  5. Add taco seasoning and mix
  6. Add handful of spinach on top. (Good to cover salsa, so it won’t splatter)
  7. Place bowl in microwave on high for 1 min 30 sec or so until slaw and spinach is soft
  8. While that is cooking, carefully peel the skin of your sweet potato (since it will be hot), dice it and add the pieces to the bowl once it is finished cooking.
  9. 9. Mix with fork and enjoy
Recipe Notes

*If you don’t have cooked ground beef on hand, cook it first and drain off the fat. Then, mix in the meat while you are scrambling your eggs.

Customization time!

  1. Want more fat? Add avocado and/or cheese!
  2. Don’t eat meat? Change it out for cooked tofu, TVP made with taco seasoning, or protein of choice
