Triple Chocolate Oatmeal Pumpkin Protein Bars [Clean, Vegan, GF]

Happy Labor Day! Still need a quick dessert, or snack to bring to your parties today? Try out these 7 ingredient and less than 30 minutes cook time pumpkin protein bars! They are clean, vegan, gluten free and packed with protein and fiber! They could be good for breakfast, snack, or dessert! Your pick they are great warm, or cold.

Last weekend I moved…..AGAIN! Ridiculous. I’ve moved like 8 times in the past 10 years. If you want to read about my cross-country move last year, I wrote a post about packing here and the move here. At least that time I had a few members of my family help me. All I can say is that I really hate moving. I had every intention on staying in the same apartment for the 3 years (or potentially longer I suppose) that I will be down here, but that ended up not being the case.

It wasn’t terrible as I was moving to a different apartment in the same complex, but man did it still suck. I ended up doing most of it on my own, but my new roommate was a massive help. Especially, since I have been away for the last couple months and didn’t get a chance to fully pack up my apartment before the move.

Day of the move I was full of trepidation. Why? Well for starters I was still nursing a shoulder injury (well, technically still testing the waters with how much it can handle). That + moving really is not a great combination.

Also..that’s when all the Hurricane Harvey rains were due to come in, as well. So it was a race against the rain clock that weekend. To make matters worse, I was 3.5 hours away with a full morning clinic. So as soon as I got back, I immediately had to start getting to work. The rest of the day was a lot of me + a dolly (THANK GOODNESS) against all my stuff and furniture. I would like to say that I came out unscathed, but in reality a week later I’m still sore, bruised and healing. Ultimately though: Me =1 Furniture=0. Hehe.

It’s been a long time since I’ve had a roommate. Last time was back in college oh almost 7 years ago. I’ve been very happy on my own so well see what it’s like to go back to that. I move back in a couple of weeks from where I am now so time will only tell. Given that college has just started for so many, it brings me back to fond memories of those glorious times.

Triple Chocolate Oatmeal Pumpkin Protein Bars [Clean, Vegan, GF]

Prep Time 5 minutes
Cook Time 25 minutes
Total Time 30 minutes
Servings 12 bars

Ingredients

  • 1 cup old fashioned oats
  • 1 scoop chocolate protein powder
  • 1 T cocoa powder
  • 1-1 1/2 T psyllium husk powder
  • few dashes pumpkin pie spice
  • 1-4 T chocolate chips
  • 1 cup pure pumpkin
  • water/liquid of choice

Instructions

  1. Preheat oven to 350 degrees and grease an 8x8 pan/baking dish

  2. Mix your oatmeal, protein powder, cocoa powder, pumpkin pie spice, psyllium husk powder in a bowl until combined.

  3. Add pumpkin and mix

  4. Add liquid of choice until a thick batter is formed. Fold in chocolate chips (or leave out and top bars with them instead before placing pan into oven)


  5. Place batter into the greased baking dish/pan and into the oven for about 25 minutes or until it comes clean with a toothpick

  6. Slice into 12 bars and place on a cooling rack

  7. Keep leftovers in the fridge in an airtight container.

Recipe Notes

The amount of liquid needed will depend on how absorbent your protein powder is and how much psyllium you use.Β 

These bars are great cold as well, leave them in the fridge for a few hours to firm up and get nice and dense!

    Aughh, more moving!? So sorry to hear! :[ After the madness that was my 4th year of medical school, I’m absolutely sick of moving and am hoping to stay in my current spot until I finish residency, haha. ._. I haven’t had any real roommates (4th year student housing/couchsurfing doesn’t count πŸ˜› ) since grad school, but your new roommate sounds pretty nice so far! :] Best of luck to you!

    1. Thank you! Yeah it’s still really hot down here too, but I like to eat these cold! I hope you try them out. They are super easy. Hopefully I’ll stay here for the rest of my residency as well. How is the beginning of yours going?!

        1. Yay! I’m so glad to hear that. Intern year definitely sucks. I essentially had to do it twice because of the speciality I’m in, but now I’m done with intern year and done with my first year. So now I am happy to finally be an upper level and it is so much better. At least because our primary call here during my first year was so brutal and now I’m no longer on primary. Definitely the best part.
