Toasted Coconut PB Brownie Baked Oatmeal [Clean, Vegan, GF]...And A Dash of Cinnamon

Time for the first Recipe Redux Post of the New Year! I hope you enjoy this tasty baked oatmeal recipe that is a perfect warm up for these cold mornings. Packed with fiber, protein and healthy fats this baked oatmeal will keep you satisfied all morning. Added bonus? It tastes like dessert!

Welcome to the first Redux post of the New Year! This year, as for the past year should have plenty of fun challenges!

The prompt for this month is as follows:

Did you receive a trendy new cooking gadget as a holiday gift? Or do you have a tried-and-true kitchen tool you couldn’t do without? Show us a healthy recipe highlighting a favorite kitchen tool, gadget, or gizmo.

I did not receive any new cooking gadget this year as a holiday gift. Now that I think about it, I am a bit surprised about that fact! I often get kitchen gadgets because I love them so much lol.

I often ask for them for gifts. One year, I even asked for a steamer haha. Even basic ones I get a thrill out of. Ironically, my dad and brother are the ones who got kitchen gadgets this year…given to them by my other brother haha. My dad got a dehydrator. Turns out my brother has turned into an awesome beef jerky maker. I am still waiting for my sample, though, ahem. My other brother got grill tools.

As for my favorite tools, or tried and true? Honestly, I have so many that I love and use on a regular basis.There are others that are very intriguing, as well that would be fun to have. Like look at this waffle maker?!

You know how I feel about my waffle maker (don’t know? Check out my post here on it). You also know that I am all about volume, so lots of little waffles?! I’m totally in, haha.

Anyway, after thinking about it, I decided I would give you a kitchen tool hack. I love toasted ingredients, especially nuts, seeds and coconut. Taking the time to turn on the oven, wait for it to heat up, carefully watch your toasted ingredient so it doesn’t burn? I don’t have time for that, especially if I want something toasted in a pinch!

So, how do I quickly toast things? Enter, a sandwich maker grill.

Occasionally, I do use this to toast sandwiches, but I use it the most for toasting things like coconut and sesame/sunflower seeds! It takes only a minute, or two and you’ve got perfectly toasty…coconut (as shown).

Toasted Coconut PB Brownie Baked Oatmeal [Clean, Vegan, GF]

Prep Time 5 minutes
Cook Time 25 minutes
Total Time 30 minutes
Servings 1 bowl

Ingredients

  • 1/3 cup old fashioned oatmeal
  • 1/2 scoop chocolate protein powder
  • 1/2 T cocoa/cacao powder
  • few dashes cinnamon
  • 1 T psyllium husk powder
  • water/liquid of choice
  • 1/2 T peanut butter
  • 1 T unsweetened shredded coconut toasted

Instructions

  1. Preheat your oven to 350 degrees and grease an oven safe bowl

  2. Add your oatmeal, protein powder, cocoa/cacao, cinnamon and psyllium to a bowl and mix

  3. Add your water or liquid of choice until a batter forms and pour into your greased dish

  4. Bake for about 25 minutes, or until baked through

  5. Meanwhile, toast your coconut (you can do this with a sandwich maker as shown, in the oven with your oatmeal for the last few minutes for example)

  6. When your oatmeal is finished, pull it out carefully and top with your peanut butter, followed by your toasted coconut. Eat and enjoy!

Recipe Notes

I just used water, but any milk will work. The oatmeal is very forgiving, if you add a bit too much, it will just take a bit longer to cook. The amount you add will also depend on how much psyllium you use and how absorbent your protein powder is.

  1. I love this idea but I want to keep it Migraine-friendly. Do you think it would taste OK if I substituted hazelnut spread for the peanut butter? Peanuts are the worst nuts for migraine sufferers ? I’m thinking that it will give them a bit of Ferrero Roche taste.

    1. Oddly enough I generally go on baked oatmeal kicks in the summer…which makes no sense so this is a much more reasonable time to be turning on your oven. I hope you give it a try! Feel free to check out my other oatmeal posts if you are interested!

    1. Baked Oatmeal is the bomb. I love it, but def like the addition of protein powder to keep it more satisfying. Most of my recipes (especially baked) calls for additional protein powder if you need more inspiration for how to use yours!
