Strawberry Orange Coconut Protein Baked Oatmeal and a dash of cinnamon

Here is another healthy baked oatmeal recipe for you! There is no added refined sugar, oil, butter, nada! Even better it allows you to get your protein, vitamin C, fiber and some omega’s in with today’s recipe. Add your shredded, unsweetened coconut on top so that it comes out nice and toasty ;).

OK, so I just found out that my contact form has not been working. SO if you have tried to email me and you haven’t gotten a response it’s because I never got the email! I AM SO SORRY! I know there have been clicks on that form (and I was always like..hmm that’s weird, why click on something that says contact me and not send an actual email, but just thought that maybe people wanted to see what exactly that tab had on it? I don’t know) But, for those of you who tried to email me, please don’t think that I would just ignore your questions! I would never! The problem has been fixed, so if you accept my apology I would love for you to resend your questions so that they may be answered as they ought to have been!

Third order of business? A Story!

So, I was leaving the office the other day and was walking back to my “room”. I was just minding my business and all walking on the curb instead of the sidewalk because 1. It’s more fun that way 2. Gotta exert my inner gymnast of course 3. I’m still a child remember? We’ve talked about this haha.

Anyway, the next thing I know a cop pulls up next to me. I was immediately like, “OMG GREAT, he probably thinks I’m drunk, or something” and then I think “OH SHOOT? Is this considered road?”

Why did I think that? Well the day prior I walked a different, new route and ahem.. me walking in the street… stopped abruptly and looked around when I came up on a sign that read:

“DO NOT WALK IN THE ROAD. VIOLATORS WILL BE PUNISHED”.

No, it didn’t say “fined”, or something less dramatic. I was all like “punished?” What a scary word.  Luckily, no one was around and I hopped back on the sidewalk that that. However, this is why I wondered if they considered curb= road since I wasn’t all that far away from the other route.

He goes: “You are just walking for exercise right?’

Me: more confused (isn’t that strange wording for a question?) and deciding that yes he probably thinks I’m drunk say, “Yes?” I mean I suppose you could say that. I was merely just walking back.

He goes: ” Ok, I thought so. If not I was going to offer you a ride and take you to wherever you’re headed”.

Me: still confused, but very pleased that 1. I’m not about to be punished and 2. He didn’t flat out ask me what I was frolicking on the curb just said something like “Oh thanks, I’m good!” and that was that.

Now I think it’s just time to ponder what had just happened with food of course! Perhaps while your baking this baked oatmeal recipe?

Anybody else think that story was weird?

Anybody else have a run in with the cops? (hehe I know I know, my run in was benign)

Instructions
  1. Preheat oven to 350 and grease an oven safe bowl
  2. Peel and cut up half an orange*
  3. Add all ingredients except coconut to a mixing bowl
  4. Add liquid of choice (I use water) until batter thins**
  5. Use a spatula to pour oatmeal mixture into pre-greased bowl
  6. Top with the coconut
  7. Place in oven and cooked approximately 25 minutes or until cooked
Recipe Notes
  1. If you don't use psyllium or depending on your protein powder, you will need much less liquid. If you use less liquid, you won't have to bake it so long. Just keep an eye on it.
  2. I like to use kitchen scissors to cut oranges. It makes the process so much quicker.
  3. Feel free to mix the coconut in. I like to put it on top so it gets toasted since toasted coconut is so yummy.

  1. Mmmm strawberry and orange. Yum =) Sounds like a great breakfast or snack. Love it.
    Hmmm I haven’t really had a run in with police anytime recently. I can’t believe anyone would be “punished” for walking on the road. Geez. I’m sure glad he was just going to offer you a ride (strange, but nice?).

  2. I have a run in with the Cops daily. (I work with them) Most of the time they are pretty decent people. More then likely he was just making sure you were ok. All I can guess is people must walk in the road A LOT for them to put up a sign about it. Maybe there was a bad accident or something in that area. Anyhow bake him some oatmeal and he will be your friend for life, Lol

    1. Yeah pretty much all the cops that I’ve had a chance to meet have been decent and good. I think he was just being nice! I have no idea about the sign, it just totally threw me haha, even stranger because it was sort of in an isolated area I feel, so …well I have no idea! I’ll keep that last part in mind. Never hurts to have a cop for a friend!
