Watermelon and Lime Protein Oatmeal Parfait and a dash of cinnamon

This oatmeal recipe calls for cooking the oatmeal first, and a few steps but can be easily transformed into a super quick overnight recipe if you want/need it to be! See notes below. Otherwise, if you can keep watermelon around long enough without just, ahem, eating it, try out this watermelon and lime protein oatmeal parfait! It is clean depending on your protein powder of choice.

I’d be lying if I didn’t say I’ve been overwhelmed lately. There are so many new things to learn, figure out and do in multiple areas of my life. Luckily some of these things have been accomplished.

  1. I now have a new license, plates and tags. Now I just have to remember to get new tags in 2 years haha. My new license is good for 6 years though? Say what? I thought all licenses were only good for 4 years, but then again I’m probably biased because I’ve only ever gotten a license from one previous state.

I did finally get to change some things around on it that were not quite accurate for so many years, like my eye color. (My eye color changes, but much less frequently now.) When I first got my license I thought hazel was green/blue. WRONG. Haha. It’s more like green/brown but I have no brown whatsoever. So I fixed that. But no name changes for me like McLovin.

2. I am trained on one computer system in full and partly trained on another. I won’t be fully trained on the latter for a couple weeks. (Huge mess, ugh). But, hopefully this will be a good start for when I’m on call. I still have at least one more computer system to be trained on. (Seriously, having everyone have the same EMR/EHR (emergency medical/health records) system would make things so much easier. Even with all the training it still takes a while to actually figure out how to use it.

3. I can get back and forth to at least one of the parking garages I know of by work and back to my apartment without using any map! Actually, my nav and google maps were trying to take me through the city to get back EVEN THOUGH I could get to the garage via an expressway pretty quickly. I was all like:

So, I analyzed a map the old school way and figured it out on my own! Yay! I knew there had to be a way to get back via the expressway and not ALL through the city taking at least 15 minutes longer. HIGH FIVE. I also have now gotten back and forth this most efficient way (at least as far as I have come up with) without getting lost and without any navigation help to this one garage. Still not quite sure how to get to the other hospitals in terms of where to park (or at least for a couple where they even are lol), but I suppose  (hope) I’ll figure that out soon enough.

Ingredients
Servings: parfait
Instructions
  1. Cook oatmeal as directed on package, or how you prefer
  2. Let it cool and mix in the oatmeal ingredients
  3. Meanwhile mix up your yogurt
  4. Layer the oatmeal, yogurt and watermelon. Eat and enjoy!
Recipe Notes
  1. Want it all overnight? Don't bother cooking the oatmeal, just mix up all ingredients in a bowl (except lime juice) and stick in the fridge. In the morning, add lime juice, mix and enjoy!
  2. I cooked mine first just to get more volume. Alternatively, you could use dry oats, mix your oatmeal ingredients into the yogurt and layer that way. It's up to you and your preferences!

  1. Ahh, I feel ya! I recently moved to a different state too, so I had to get a new license/plates/tags as well (sighh). Mine lasts til 2020!

    This parfait looks super good! I’ve been meaning to make a bunch of ready-made mason jar overnight oats, but I may need to reserve a couple jars for these parfaits! <3

    1. Sigh is totally right. It’s crazy and expensive and I can’t really see the point of it. I mean…my stuff was all still good! Why can’t I just wait until things expire and then get them changed over? That would have been better haha. Yeah this is a good one as long as you can umm put the melon into the mason jar and not just eat it which is what I had trouble with lol
