Want a delicious cool treat for these hot summer days? Try out these crunchy peanut butter and chocolate chip cookie dough protein freezer bites! They are no bake, contain only 4 ingredients are are super quick to make. They are low carb, high protein and can be clean and vegan depending on the chocolate chips used!

So, I’m sort of maybe starting to figure some of this new residency program out. I was on call this past week from Thursday 7am-Sunday 7am! That’s a long time! However, this go around it was not too terrible actually! I was only covering 2 hospitals this week.

Remember how I told you I didn’t even know where one of the hospitals was?Lol. Well, I got called on a couple patients there last week, so I got to trek out there (and get somewhat lost, but that’s a different story lol) to go see them. Embarrassing though when you are all finished with your consults and then try to leave only to have to come back and ask how to get back to your car! Ha! It was all like:

It’s nice not having to stay in the hospital for the entire duration of my call though. That is a huge change! (Although, I’ve never had to be on call for such a long time before). These are some of the things I have learned.

  1. Wearing a pager out in public when you are on call is super sexy (JUST KIDDING). Although here’s to hoping I looked as cool as this guy does with his pager lol.

2. It is so stressful when you are trying to take care of clinic patients, then get a bunch of pages and have to deal with those at the same time. Especially when you don’t know numbers, procedures, who to call, computer systems etc yet. SO it has really sucked during the day when I have to manage all of that. Some of these days has been like:

I’m hoping it gets better once I get more acquainted with everything. Who knows when that will happen though because after this week, I’m out of town for a couple months (traveling back and forth now) so will have to work on re-learning things then I suppose. By then though I should at least have access to all the of the computer systems. (Yet another stressful thing going on right now, ugh.)

3. It totally sucks when you’ve had a long day, are ready to go home, are part way home and your pager goes off. GAH! Your just like:

4. It’s awesome when you don’t get paged at all overnight. However, I’m still in that paranoid phase where I’m not certain if my pager has gone off so have been sleeping terribly and waking up every once in a while to check my pager. However, I’ll take that rather than the alternative of getting paged to have to go in in the middle of the night. My face in the middle of the night when I wake up scared that maybe my pager has gone off and I didn’t hear it.

Pretty sure that wouldn’t be possible because I’m such a light and fitful sleeper. Oh well, I’m sure you’ll be hearing more about this whole home call in the future. This week I’m on from Wed 7am-Sat 7am..and covering allll of the hospitals. Cross your fingers for me!

Instructions
  1. Gather your ingredients and your mold (see notes for other options)
  2. Crush your peanuts roughly
  3. Add all ingredients into a bowl and stir. It will be thick
  4. Use a spoon or spatula to press the dough into the mold
  5. Place in freezer for ~30 minutes or until frozen.
  6. Eat and enjoy! Store them in the freezer in an airtight container.
Recipe Notes
  1. The number of bites you get will depend on your mold size. I use a silicon mold because it is easy to pop the bites out. Alternatively, you could try a plastic top. Just spread out the batter on the top, score it and freeze. When it comes out you should be able to break off the pieces along the score line
  2. This recipe is easily multiplied. Just use the recipe servings tool if you want to make more than one batch!

  2. It sounds like you’re starting to settle in ok, it’ll take more time I imagine. Hopefully you start getting better sleeps. It must be tough being on call.

    1. I’m finally in one location, on an off-site rotation so I’m starting to have a bit more stability which is so nice. Call can really suck haha. I’m hoping call out here at this place I’m at isn’t too bad. The bites are SO good. I agree..it’s such a great combo!

    1. Actually, since peanuts are so soft I generally just crack them into a bunch of pieces with my fingers, especially if I only need a small amount. However, for harder nuts, I keep a hammer as a kitchen utensil lol. I place the nuts into a plastic baggie and smash them with the hammer which serves 2 purposes. 1. It’s a great way to crush harder nuts but mainly 2. It’s really satisfying for me to use a hammer haha. (Alternatively you could give them a quick pulse in a food processor/blender if you wanted, but keep a close eye on them as to not grind them)

    1. Thanks for reading it! I’m so glad that others can get enjoyment out of it! It was super tasty and so easy to whip up to satisfy a sweet tooth! As for your question….I have no idea…it’s….REALLY hard. I’m not sure if I’ll be able to sustain it and definitely have not had the time to do what I would really like to with it especially since I’m just starting out and really would like more exposure, sad because I have had to back way down from what I was doing when I first started, but well see. I’m trying. It probably helps that I don’t sleep well (or much). :/

    I haven’t thought about pagers in a long time – they were cool to have when I was a kid before we had cell phones (yes, I’m old lol) but of course I was never allowed to have one.

  7. This freezer fudge sounds yummy! I’ll take all the protein I can get!! Just curious… why do you recommend unsalted peanuts?

    1. You should definitely try these out! I recommend unsalted purely for the fact that most people eat WAAAYYY too much sodium in their daily diet which can cause problems down the road/exacerbate ones that you already have. Therefore, by getting unsalted you still get the benefit of the peanuts but not all the excess sodium.
