For all others, this is a delicious main meal recipe that is clean, easy, vegetarian, protein/fiber packed and made with only a handful of ingredients! Want more than one serving? Guess what?!

I graduated on Friday from my intern program!

So, it is true that I have graduated plenty of times now (like more than I can count on one hand..), but alas I am still NOT DONE. GAH! Oh well. Now on to some details.

We got the “Save the Date” for this event months and months ago, probably in November, or something ridiculous like that. Last week, we were asked to submit pictures of ourselves. I was like, “Why do you need my picture…multiple pictures?”

Fact: I am terribly not photogenic and pictures of myself tend to make me cringe. Occasionally, I’ll have a good one and I’m all like:

Fact: My fourth year of medical school, one of my goals was to become more photogenic. I failed to accomplish this goal. *Sigh* So it is still something I need to figure out. Any tips? Lol

Fact: I’ve literally been told that I look much better in person. Ha! Oh well, if I sit down and think about this, it is much better this way than the other way around. But still, it would be nice not to look awful in the majority of my pictures, haha.

Anyway, why the confusion? You see, I had thought the event was for the graduating 3rd years. Turns out, it was for the graduating interns (who are doing there residency at another program), as well! Glad I realized this before the event.

What would have also been nice to know beforehand? That we’d have to give a little speech. Yep, you heard me right. We were asked to give a speech, impromptu, while we were sitting on the “stage”. Therefore, there was zero time to think about what we might say. We all just sort of looked at each other like:

By the time you got over the horror of this fact, it was your turn. The speeches turned out fine, some were awkward, but I say we got through it well as a group. People thought mine was funny, so I take that as a win.

We got a really nice certificate that was not in Latin at the end of our speech! I could read it! Yay! Haha. We also were given a pen. Lol. Yep, a pen. Well, granted, good pens are a REALLY HOT commodity in my world. If you have a good one, you really have got to keep an eye on it.

Yes, there are good ones and bad ones. I’ll confess that I do have particular requirements for pens that I use during work. (Otherwise, in the outside world, I’m not that picky.) I bet everyone in the medical field knows what I’m talking about, though. However, having your good pen “disappear” happens more frequently that you may expect. Some people are more territorial over their pens than you may expect.

I’m not that extreme. However, I admit I will pay extra special attention to a good pen I loan out and I am not afraid to ask for it back if the person is hanging on to it even when they are done with it no matter who they are. Or, since I always have a plethora of pens on me (hey I’m an intern remember?) I’ll often have at least one that I can part with and not lend out my good one. (Particularly, if that person is a notorious pen snatcher).

I feel like the program knows of these pen problems and tried to mitigate it by engraving our names on the pens. Ha! So now I have a fancy pen with my name on it that hopefully 1. Will deter it from “disappearing”? 2. Will make it easier to find if it does go missing? Guess we shall find out.

Anyway the rest of the night included a super delicious meal, although I’m still not sure what dressing was on the appetizer salad. I couldn’t even place the tastes well…which is weird and odd and it was green and…tangy? Maybe? Hm, I don’t know, but not important haha. I ate around it.  The night concluded with some dancing, but it was pretty limited to just my group of interns. Haha. Oh well. We had lots of fun and it’ll be sad to part from them since we’ve been through so much together this year.

Now let’s get to the recipe! This one was so filling that I stopped and came back to it a few times before I completely finished it! Even though there aren’t many ingredients it is packed with clean deliciousness. If only I still had all the ingredients to make it again! I personally ate it for dinner, but if you are more of a savory breakfast person, this would be a great recipe to try for your AM meal!

Ingredients
Servings: bowl
Instructions
  1. Prep all of your vegetables if you do not already have some precut
  2. Add your vegetables, barley and liquid to a pot and bring to a boil.
  3. Lower heat to a simmer, cover and let it cook for 25-30 minutes, or until barley is soft
  4. Once done, turn off the heat, uncover (if you have the time, let it sit for a bit to allow the barley to continue to thicken)
  5. Either towards the end of cooking, or while you are letting the barley mixture cool, scramble your eggs in a separate pan
  6. Once done, drain barley mixture of extra liquid and stir in eggs and tahini. Eat and enjoy!
Recipe Notes

-I used a 1 quart pot for this single serving. If you want more servings, use the servings box to input the number of servings you want for it to automatically change the ingredient amounts and use a larger pot for any more than just 1 serving.

-You don't need this much liquid, but it is easy enough to drain and I like to let the barley get super thick, so I add extra liquid. It is more of a 1:3 barley to liquid ratio if you want to do it without draining.

-I used water, but you can use stock or whatever sort of liquid you prefer

-This could all or partially be made the night previous if you want it for a weekday breakfast. If so, I would let the barley mixture sit as long as possible for it to really soak up the extra liquid to its full potential.   1. Congrats on graduating! I can’t say I’ve ever had tahini with eggs, not sure what I think about that one but can’t knock it until I try it I guess.

  2. The key to having your picture taken is if you can pose for it. When someone snaps the camera when you’re not looking, your facial expressions can look distorted and weird…like “who’s that”!

    Pens, pens, pens…this is s whole different topic of conversation. They should invent “find my pen” radar or something. It’s amazing how many people say, “I don’t have it”.

      As for the pens, I laughed today. I went to go for one of my pens and was like “Wait….where’s my pen?!” Then, I remembered that an attending asked to borrow it an hour, or so earlier and never gave it back. I sneakily tried to look around the place he was sitting to see if it was there, but no! I spied it in his scrubs front pocket and had to ask for it back since it was a good one! Lol! a pen finding radar would be super helpful.
