  1. If you already have these ingredients, throw them together in a bowl, heat, mix and enjoy! Simple as that.
  2. If not, cook bulgur on the stove according to package directions.
  3. Meanwhile, you can cook the chicken using your preferred method. Grill, stove top, bake, boil, microwave. Same goes with your sweet potato.
  4. Once ingredients are done, make sure to drain the bulgur if there is any remaining liquid, toss in the rest of the ingredients. Stir, heat more if needed, place into bowls eat and enjoy!
Recipe Notes
  1. If using this as part of meal prep, make sure everything has cooled off before you place it in the fridge
  2. Many options will depend on your time frame. I often need super quick meals so as you know I like to cook a lot of ingredients in bulk so I can grab as needed to whip together meals.
  3. Due to #2, I cook my sweet potatoes in the microwave. Stab with a fork, place in microwave for at least a few minutes (time will very on size, will likely need at least 3 min). CAREFULLY, remove skin (will be hot if you don’t let it cool), dice and place in bowl.
  4. Since this has a Mexican flair to it, if you do anything but boil your chicken, feel free to add taco seasoning to the chicken before you cook it.
