Want another yummy guilt-free, no-bake protein packed cheesecake recipe? Try out this Chocolate Raspberry Almond variation. It has all of the creamy rich taste of your typical cheesecake, but it a healthy, low-carb treat that has no added sugar. It packs a hefty dose of protein and calcium, as well and even it doesn’t need to be baked. So get out your food-processor and let’s make another cheesecake.

So there happens to be a beach not even a mile away from where I’m staying. That’s great and all except for the fact that it’s still raining most days than not. Yesterday, there were even more torrential downpours. I thought that was done with. Guess I was very wrong.

It also doesn’t work out well when you go to the office to get some work done (GAH) and have left your umbrella and your rain jacket in your room (I may have taken them both out for a previous excursion and did not return to my bag afterwards…) and then it starts raining like there’s no tomorrow while your still at the office….for hours….

Oh well. It’s probably for the best. You see, there was one day where I did venture to the beach. (It was actually not raining!) I thought, “I’m going to go try and study on the beach”. Because you see, I don’t have the luxury of going to the beach to relax and enjoy myself. I’ve still got to spend my time studying. (..hate..).

However, it was SO hot out I could barely concentrate. So, of course, I decide to get in the water to try and cool off a bit. (Actually, I attempted first to bring my book in the water to study. However book + ocean lapping water do not mix well. But, you probably already knew that.)

The secretary, however, was horrified when she found out I had gone to the beach. She was all like, “You didn’t get in the water did you?”

Me confused at why she would ask that replied, “…..Maybe.”

Her: “OMG How could you have done that. That water is full of vibrio. Some guy just lost his leg. Do you know how many people have lost their limbs?”

Me, after a quick scan of my body and thinking, “Vibrio? Yikes” , reply ” Welp, good thing I don’t have any open wounds!”

Her= disgusted.

So, perhaps, like I mentioned, it’s a good thing that it’s been raining so often. Anyway, in case it’s hot where you are, how about we cool off with another cheesecake recipe? Ingredients
Servings: cheesecake
Instructions
  1. Add all ingredients to a food processor and process until smooth
  2. If you want it to be a stand alone as pictured, use a greased ramekin or dish of choice depending on number of servings you are hoping to make. (If you want to leave it in the dish, then no greasing is needed). Use a spatula to place mixture into dish of choice.
  3. Pop in the freezer for ~45 minutes (It should be firm to the touch, but not solid)
  4. If want stand alone, use a knife along the edges and flip over onto serving plate. If not, just serve from the dish and enjoy!
Recipe Notes

*If you forget about it in the freezer, don't worry! Just take it out and place in the fridge to thaw out a bit.

*Too soft, don't worry about that either! Just stick back in the freezer for a little bit. It's a very forgiving recipe.

I honestly usually just stick my food processor bowl and lid (without the blade) into the freezer and eat it straight from there. Less to do and less to clean. But, if you are looking to serve these, then feel free to place them in ramekins and pop them out like I have here!

    1. Eh vibrio can be terrible if you get it. There are different types of vibrio species however the one I am referring to is generally associated with seafood/sea water and can be deadly if gotten. It can give you general GI symptoms..or…worst case…if say an open wound is exposed to it..it can cause a necrotizing fasciitis pretty rapidly..and cause limb loss (because you have to debride or cut off the infected skin) and death. (If you want to be grossed out I’m sure you could google vibrio vulnificus (I believe is the spelling) and necrotizing fasciitis and get an idea of what I’m referring to. However, you may just not want to know….lol)
